COMMERCIAL DESCRIPTION
Colour Five was brewed with Hill Country well water, barley, wheat, and hops. It was fermented with our unique mixed culture of microorganisms, which includes farmhouse yeasts, naturally occurring wild yeasts harvested from our land in the Texas Hill Country, and native souring bacteria. After extended fermentation and maturation in oak barrels, Colour Five was refermented with Texas blueberries over the course of several weeks. The final refermentation of the beer occurred in bottles, kegs, and casks. Colour Five is 6.5% alcohol by volume, 3.2 pH, and has a finishing gravity of 1.000 (0 degrees Plato). It is unfiltered, unpasteurized, and 100% naturally conditioned.

UPDATED: DEC 17, 2018 Draught at Tilt, Birmingham. Burnished copper with cream head. There is a moderation to the sourness with this beer, slightly acidic, red fruits with an earthy background. There is a woody mote, maybe leather in there. Deep and mysterious. Very good.

UPDATED: DEC 6, 2018 On tap at OMBF 2018, Krakow. Dark red with white, slightly pinkish head. Berries, funk, medium acidity, some oak dry. Watery. Soft carbonation. Medium bodied.

The green-glass bottle is unique in its shape, reminiscent of something that might hold Italian wine. Similarly, the beer itself glugs merrily into the glass - a deep, dark purple, with a pearly-white head. Fine carbonation soars up inside the glass. The complexity in the aroma is really something else. Dark, vinous fruitiness hints towards merlot, with a subtle, underlying farmyard pong. Thick, gooey blueberry jam. Cardamom and cloves. There's even a hint of pimento olive lurking in the midst. The flavours contrast, complementing each other in uneasy equilibrium. The aftertaste is soft and protracted, leaving bramble, sultana and oak on the tongue. Much like a merlot, the beer itself is medium-bodied, and flows in a silken sort of way. A really remarkable sour by all accounts. If you know a wine connoisseur who "doesn't like beer", ask them to try this absolute gem.

Keg at IMBC 2018, session 3. Pours deep, mostly clear burnished copper with a slight, foamy head. Nicely rounded sour berry character, balanced acidity, leathery fruits. Medium bodied with fine carbonation. Moderate acetic bite in the finish, further leathery berries. Good one.

Keg at indy man beer con. Session 2. A deep reddy plum coloured pour with a sticky pink head. Aroma is smoked cherry, tart blackberry fruit, woodland, cherry. Flavour is composed of semi sweet, raspberry culle, woody fruit pips, raspberry, blackberry. Palate is semi sweet, tart modrerate carbonation. Nice fruit character.

Keg at IMBC. It pours hazy deep red to purple with a small pinky head. The aroma is sweet - sour, juicy blueberry, tangy bramble, blueberry cobbler, earth and funk. The taste is crisp, bright, tart, zingy, sour blueberry, tangy, fruit cordial, spice, funk, oak, granny smith apple, jammy fruits, leather and some tannin with a drying finish. Medium body and fine, prickly carbonation. Bright, juicy, tart and funky. Fun stuff.

UPDATED: SEP 28, 2018 Deep purple color. Nose is dark fruit and light funk. Taste is tannic and dry, lightly tart. Flavors of blueberry and tart wheat. Very blueberry forward which is hard to do. Good stuff, but not their top tier.
