Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

UPDATED: OCT 6, 2018 Smells like toilet paper that has been stuck in my ass all day and then falls out of my underware looking like mini splifs. It taste nothing like belgian beer more like ice cream melting on the sidewalk in st jerome. Its ok to give this beer to all the montreal canadians management because it makes you brain dead. Ps pk suban left a case of beer to them

UPDATED: OCT 6, 2018 Bouteille de 341 ml. Couleur de paille, odeur de mort car c'est la dernière volonté. Le goût n'est pas désagréable mais pas super intéressant.

Vierte amarillo claro con gran corona de espuma blanca de larga retención; aromas a pera, manzana ácida,levadura belga, cereal, flores y pan ; en boca entrada suave, refrescante, picante y con ligero amargor que se hace más fuerte en el retrogusto, cuerpo medio ligero y alta carbonatación, notas ácidas, especias y a cereal, alcohol bien integrado, se bebe fácilmente, el brett le da complejidad y equilibrio.

Couleur dorée limpide avec une mousse abondante et tenace. Effectivement, le nez est bien funky comme il faut avec des notes brettées à souhait. Bien sèche en bouche avec une carbo bien violente. Notes de levures un peu âcres en fin de bouche. L'aspect IPA me laisse bien dubitatif... On perçoit un petit quelque chose de zeste de citron, mais plus globalement de fruité sur les agrumes qui parvient à lisser l'ensemble. Les bretts réapparaissent quant à elles en fin de bouche après avoir fait acte de présence dès l'entrée. Propre.

UPDATED: JUN 3, 2018 Bottle from K&L in Redwood City, CA. Aroma is mild fruit, maybe apricot, loads of funky Brett, attic bones, moldy stone fruit. Taste is bready, dried apricots (without any sour notes), dry and funky wood (maybe coffin?) with a spicy, yeasty finish that persists deep down. Very goth and erotic.

Aroma: notes of belgian ale yeast, some mustiness, village, some lambic-style notes, funky notes, peach, aprictot, floral notes. Fine. Taste: a bit tarty, bit sour, nice. Carbonation is at high level. Head is qute nice, bubbles are big but there's nice lacing. Beer has orange color.

Alengrin (7423) - BELGIUM - MAR 6, 2018
Canadian 'wild' tripel, bottle at Moeder Lambic Fontainas. Tightly cobweb-lacing, moussy and foamy, snow white head, initially as good as clear, warm and deep golden blonde robe with lively sparkling, misty with sediment. Aroma of overripe yellow plums, sweet red apple soaking in molten butter, gooseberry yoghurt, sweat, soggy white bread, honey, feta, old stale orange juice, goat cheese, wodka, vanilla. Fruiy, estery onset, ripe pear, gooseberry jam and starfruit notes, sweet with a sourish edge, creamy body coarsened initially by very sharp, numbing carbonation; pleasantly rounded, doughy, malt sweet middle, bit buttery with a thin layer of honeyish sweetness on top, shifting towards a long, leafy, earthy and cheesy hop bitter finish, peppery with hayish and leathery Brettanomyces notes blending in very well, with a dash of warming, gin-like alcohol in the end. The plum and honey sweetish notes as well as the butteriness linger a bit. Pleasant and interesting 'Bretted' Belgian style ale, good balance of sweet, sour and bitter with the sweetness prevailing; should improve and gain more complexity with cellaring.

notes from an old note book.dark yellow with a thin white head. aroma is sort of unibrouesque. doughy, very earthy a touch of funk and sweetness. light peppery taste with a cookie sweetness. lemon cream goodness throughout. well done.

34,1cl Bottle @ LaBIRRAtorium, Madrid, Spain. Hazy amber colour with a thin white head. Aroma is malt, citrus, yeast, herbs, spices. Taste follows the aroma. Medium body, average carbonation.

341ml bottle (thx, Alex M.!). Bottled on 2015-09-25 (lost in inventory, hehe). Three varieties of Dernière Volonté in a row. Pours a hazy golden with a white head. Aroma is fruity, flowery, typical for Belgian beers. Same taste, similar to Belgian Saisons. Good stuff, despite it’s old.
