COMMERCIAL DESCRIPTION
For this special release, we set out with the goal of making a beer where every ingredient and process contributed to one ambition: creating layers of apricot flavor. The natural flavors of the brett yeast create tropical and stone fruit flavors in the barrel, which we matched with a small mountain of San Joaquin Valley apricots and finish with a delicate dry hop of aromatic hops. The result is every aspect of the beer, from the yeast, to the fruit to the hops add apricot flavor and aroma – resulting in a delicious wild ale.

Smells hoppy but its nice and light, a bit floral, a very clean sour ness thats mild a bit dusty plays perfect to the apricot

OnTap cloudy light yellow peach color. Foamy sticky white head. Very prominent Brett aroma with light stone fruit character. Some apricot in the flavors but mostly a light bodied fresh hoppy brett beer. Very tasty

Very very hazy white amber color. Lovely sour nose with oak, Brett and apricot notes. Lovely light mouth of Brett, oak and apricots. So well balanced and puckering tartness. The fruit is so well integrated. Loving apricot and oak finish. Awesome. Just what I expected and it delivered.

Pours hazy golden with low white head. Aroma of funk, grass, green grapes, apricot. Taste is mild tart, lightly funky, sweet notes, and then a tarty lingering finish. Light and crisp body with average carbonation.

375 mL bottle. I poured myself some yeast, so it’s cloudy while the other glasses are clear. Smells of apricot, white wine, a little lemon, and some yeastiness. Tastes pretty tart. Pleasant apricot tartness. Oak. Some vanilla and white wine. Yeasty finish, but that’s probably by bad pouring skills. Medium body. Nice all around.

appearance: clear amber gold, creamy light yellow head, decent lacing. aroma: sour apricot, delicate yeasty funk. taste: marmalade, candied apricot, tart lacto sourness, hint of brett funk but not sharp. finish: great palate, lingering tart stone fruit. notes: Really nice sour. Draft at The Brew Cellar in Charleston, South Carolina.
