COMMERCIAL DESCRIPTION
Bottle conditioned. Brewed with choice malts and an extended top fermentation. This naturally conditioned ale experiences interactions between the robust malt, hop and yeast characteristics, to exhibit an intriguing journey of flavour development over a period of five years when stored under cellar conditions.

UPDATED: JUN 30, 2022 375ml bottle from RusBeerShop in Moscow. 2020 vintage. Pours opaque brown with a medium-sized off-white head. Aroma is dried fruit, caramel, nuts. Taste is light sweet, caramel, tannins, a touch boozey. Light bitter finish. Medium bodied.

UPDATED: AUG 22, 2021 This feels like a return to prior form after a big hop bomb in 2020. Fresh, the 2020 vintage was something else and maybe polarizing enough to see Coopers tone this one down by 5 IBUs. For me, I’d like to see a return of Simco next year.

UPDATED: FEB 21, 2021 Straddles the line between refinement and grit. Like how wealthy Australians are portrayed in Hollywood; fine wine and class, but also looking like they're fresh off a horse, and probably drunk.

There's an almost 'VB' esq taste upfront, but if you persist you'll come across a strong, dignified palate. It's like persisting through three episodes of Married at First Sight then realising it's actually a remarkable critique of 16th century French poetry

Well presented and quiet respectable throughout, until a sudden kick of sweetness at the end, which undermines it a little, like beautiful poetry that turns out to be about boobs. ---Rated via Beer Buddy for iPhone

UPDATED: NOV 13, 2020 Quite sharp with flavour. Very malty and peppery in finish. Would be interesting to see how this beer settles flavour wise if left cellared for a few years. I’d suspect it will be smoother and more rich. But I’m not one to let a beer sit that long before drinking it so I’ll never know.

UPDATED: OCT 1, 2020 Reelly injoyed this one quite dark an rich could have done with a little more bitterness towards the end.. At 2 standerd drinks a bottle it had a bit of alcohol heat on the back of the palete
