COMMERCIAL DESCRIPTION
Our Heather honey traditional mead explodes with Scottish Heather honey, known for it’s incredibly vibrant aromatics and flavors, which bear a strong resemblance to those of Scotch Whisky. It is among the dearest of honeys, fetching high prices for it’s mesmerizingly fruity, woody and complex nature. The honey and the mead can both be accurately described as boldly perfumed, uninhibited and resplendent.

UPDATED: JUL 20, 2023 375 ml corked bottle, batch #3. Served in a Schramm's wine glass, the mead pours a mostly clear gold color. I like the aroma, it's strong and it smells like honey and earthy floralness. Taste has a kick too, but with the addition of some wood and light smokiness. Leans sweet tasting, but the other flavors are all noticeable too. Mouthfeel/body is full, it's slick, rich and easy enough to drink. I liked this mead a lot, definitely worth trying if you get the chance!

UPDATED: MAR 5, 2020 On tap at Schramm’s, pours a clear golden yellow. Aroma is unbelievably intense, with elegant, intense honey that tickles the nostril hairs. Flavour reveals exceptionally intense and pure honey character, almost like I’m sucking the honey out of a beehive. Wow. That’s some intense stuff. I can see this turning off some palates, but this is pretty spectacular.

UPDATED: FEB 11, 2020 Taster showing golden hues. The nose shows pronounced notes of honeysuckle with light floral notes and a hints of nuttiness. The palate is medium bodied. Moderately and balanced sweetness and very concentrated honey forwardness with a light acidity and light floral notes and light nuttiness with more raw concentrated honey on the finish.

UPDATED: JAN 21, 2020 29 November 2019. At Billie's Craft Beer Fest. Cheers to the lovely Anke, tderoeck, 77ships & Ghent beer crew! Batch 2. Clear golden, no head. Aroma has honey, honey, honey, apple, white bread dough. Taste is very sweet honey, fruity touch, a bit bready, a bit sourish, more honey. Very sweet finish with expected liqueur alcohol. Medium body, syrupy texture, flat carbonation. Delicious 'liqueur'; felt a bit out of place here.

UPDATED: OCT 31, 2019 Faint yellow thick and oily. Smells like the most fresh an amazing honeycomb just raw and uncut. Amazing. The flavor is awesome. Straight honey, loads of honey just delicious. Honey comb, raw honey, banana and apple. The purest expression of heather honey mead. Seriously (latest batch 2019 batch 2?)

UPDATED: OCT 25, 2019 Bottle to snifter at Schramm's. Looks good; a still honey gold. Smells solid; robust notes of honey that are more earthy with mildly floral presence alongside a touch of barnyard. Tastes like it smells with an even RICHer honey presence. Mouthfeel is full-bodied and mildly warming. Unusual and intense, but enjoyable nonetheless. A full pour would be tough to finish though.

UPDATED: SEP 29, 2019 Batch 2 sample at Schramm's on 8/10/19. Clear gold pour with sticky legs. Aroma of sweet honey and florals. Sweet honey flavor with floral accents before a sugary finish. Decadent and very nice.

Pours yellow orange. Aroma is musty and pungent. Full on heather honey. Wow did they capture the uniqueness of the honey here. Rich and sweet, earthy and dirty. I like it.
