COMMERCIAL DESCRIPTION
We are brewing a classic Bavarian-Style Dunkle Weisse (Dark Wheat) beer. Ayinger’s wheat beers are among the best produced anywhere in the world. We decided to bring together our two approaches to the style and create an all-new, rich, and malty version of the style. It’s brewed in our open fermenter to allow the authentic Bavarian yeast strain to shine, with complex aromas of banana bread, caramel malt and clove.

Nutty/banana aroma with raisin; fruity, sweet and roasty - quite yeasty (8-). Taste follows, some extra minerally bittering. Pours hazy nut brown with a nice, tight 2-finger bone-colored head. Stereotypical aromas of banana esters with some yeast and a touch of black pepper. Body is medium and lightly oily. Mildly dry finish. Flavor matches the aroma, with yeast and black pepper lingering at the back. Some banana oil up front. Very nice.

12oz bottle pours with a somewhat murky mohagony colored body that supports a thin tan head. The aroma offers up some jammy notes moving quickly into earthy fig and dates as well as light mineral to yeasty note at the end of the draw. The taste delivers similar notes of sweet jammy fruitiness sliding into prunes and a  bit of earthy dates. There is a mild biscuit maltiness that seems to have a faint rauch sensation too. Pretty passable offering.
