COMMERCIAL DESCRIPTION
Sin Frontera – Second Round – 2016–2017 – 6 % vol.alc. Barrique de Cognac Ron et Amber de Jester King Brewery nous ont rejoint aujourd’hui pour le brassin de Sin Frontera – Second Round, en collaboration avec Crooked Stave Artisan Beer Project et Brasserie Trois Dames. Même recette que 2014 sur une base de bière d’inspiration Lambic avec du malt Crystal en plus. Cette bière sera fermentée avec notre < House yeast > et un mélange de levure Saison « French » et Saison « Belgium » de wyeast. Fermentation en Foudre pour 2-4 mois avant de transférer cette bière dans des barriques de cognac pour 8-12 mois. L’idée sera de pouvoir comparer une recette identique mais avec l’emploi d’autres barriques pour la maturation de la bière.

Bottle share at Mon Petit Cafe, Stuttgart. Strong sourness, brett, lemon zest and fresh cherries. Aftertaste of honey, oak, some leather. Refreshing and complex at the same time.

Bottle @ Uptown baby. Pours unclear amber Golden with a White head. Wood, funk and slight vinegar and even slighter popcorn - harmless. Some cognac for sure. Lactic, dry and funky finish. Enjoyable.

330ml bottle served in a pint glass. Pours a cloudy orange color forming a medium creamy white head with low retention and lots of thin lacings formed and left in the glass. Nose is sweet. Strong notes of sweet pale malts and vinegar. Apple vinegar and citrus. Light metallic notes. Slightly sweet upfront taste notes. Strong notes of pale malts, citrus lemon peal, apple vinegar. Oak and leather. Citrus and sour. Medium body and carbonation. Apple vinegar aftertaste. Good drinkability. Quite sour. Great wild Ale.

Sample at Shelton Fest 2017, on a suggestion from the gallery. Cognac is light and adding just a bit of sweetness to the otherwise complex and medium tart sour. Medium funk on the finish as well. Well done.

Clear medium orange yellow colour with a small, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, tart, grapes, lemon - citric, wood - oak. Flavor is moderate sweet and acidic with a long duration, tart, grapes, wood - oak, lemon - citric. Body is medium, texture is watery, carbonation is soft. [20170818]
