COMMERCIAL DESCRIPTION
For the second release of Tête de Cuvée, I chose a blend that was 76.3% of Tête (Saison) #2 that was fermented in and aged in the exact barrels that contained all of the threads from Blend #1. Hoping that the magic of those original barrels would once again impart their unique impressions on the new fermentation in them. This recipe is a slight variation of our Saison du Fermier recipe and the barrels were a mix of 225L French Oak Chardonnay and 500L French Oak Pinot Noir. Barreled on November 14, 2015.

The remaining 23.7% of the blend was our classic Oude Fermier that was fermented in and aged in 225L French Oak Chardonnay barrels. These barrels were first use for us, imparting bold notes of almond, vanilla and the classic French Oak spice. A flowing mouthfeel and subtle acidity resembles more of a Burgundian White Wine than beer in this blend. Barreled May 30, 2014.

After 3 months of bottle conditioning, we feel as though this vintage is ready to share with you. The result is an aged Missouri Saison that is our deepest expression of our Saison-inspired beers yet. Billowy mouthfeel, a complex acidity that falls right between the first blend of Tête de Cuvée and our Saison du Fermier from Pinot Noir Puncheons, and endless, layered expressions and nuances round out this exciting beer.

For this release and all Tête de Cuvée releases going forward, the bottles will be vintage dated as the year of the youngest barreled thread of the blend.

[ As Side Project Tête de Cuvée - Vintage 2015 ].
ABV: 7.0%. Cloudy - hazy medium orange yellow colour with a small, fizzy, fair lacing, mostly diminishing, off-white and open head. Aroma is moderate malty, sweet malt, light wheat, moderate yeasty, nectar, oak - barrel, citrus - grapes - vinous, light almond - marzipan. Flavor is moderate to heavy sweet and light acidic with a long duration, nectar, fruity yeast, tart, sour, funky, grapes - green apples - vinous, oak - barrel - vanilla, floral, light almond - marzipan. Body is medium, texture is oily to watery, carbonation is soft. [20190615]

UPDATED: JUN 15, 2019 Tap. Pours muddy orange with a white haed. Aroma of fruity brett, slgiht touch of marzipan - macroons, quite alot of wood, a bit herbal, slight spice, grapefruit. Taste is quite tart, loads of acidity, fruity, quite bretty, quite some stonefruits, woody - a tad herbal. a tad sweet, light dry finish.

UPDATED: DEC 26, 2018 750ml bottle. Pours a cloudy golden color and topped by a small off white layer of foam that settles to a thin film and leaves patches of lace around the glass. The aroma is really nice showing notes of citrus fruit with peach and apricot coming to mind along with notes of green apples, Chardonnay grapes, must and crisp wheat with plenty of barnyard funk and sourness throughout. The flavor follows suit with notes of stone fruits with peach and apricot up front followed by hints of hay, crisp wheat, barnyard funk, oaky sourness, and Chardonnay grape must. Really nice balance between the stone fruits, funky, and oaky sourness. Medium bodied with ample carbonation that leads to a crisp wheat, stone fruit, and funky sourness on the finish. Really tasty and well executed blend of barrel aged saisons. Awesome stuff.
