COMMERCIAL DESCRIPTION
Bottle conditioned - 150 cl, 75 cl, and 33 cl bottles. Named Grande Réserve in 75 cl bottles, and Magnum Grande Réserve in 150 cl bottles. The beer name is simply Chimay. It is sold in a blue label, and so is known as Chimay Blue in English speaking countries, Chimay Bleue in French speaking countries, and so on. Chimay Blue is a dark ale with a powerful aroma. Its complex flavour improves with passing time.

UPDATED: AUG 12, 2020 Great beer. I had one in its original tulip glass one year over best before date. It's flavour is mahogany, cola, brown sugar, cinnamon, red fluits. Very well balance complex beer, this is to me one of the best beers by far.

UPDATED: AUG 9, 2020 Bottle (marked L18-422) pour from Total Wine & More, Burlington. Appearance is hazy dark brown (mahogany-red with light source directly behind) with nice sparkle, finger-width beige head with decent retention and trace lacing. Aroma is molasses, brown sugar and mix of sweet and tart dark fruit. Taste follows aroma with strong molasses and brown sugar dominant over sweet dark fruit. Mouthfeel is light-to-medium bodied with smooth, frothy texture, average-to-fizzy carbonation, nice alcohol warmth and fairly crisp finish as taste. Overall, not totally complex but nice strong aroma and flavor and well balanced. A tad overcarbonated.

UPDATED: AUG 4, 2020 Enjoyed: Poured from a bottle into trappist glass. Appearance: Deep brown colour, rich cappuchino-like head. Aroma: Dark fruits, caramel, roasted malt, yeast, hint of alcohol. Palate: Full body but still somehow velvety, gentle carbonation with warm mouthfeel. Taste: Dark fruits, caramel, roasted malt, hint of chocolate and coffee, bittersweet. Overall impression: Very tasty and enjoyable; Complex and well-balanced, drinkable despite ABV.

UPDATED: JUL 30, 2020 Very dark reddish-brown colour, firm and fairly tight white head. Boozy vanilla aromas. Feels quite thick in the mouth. Raisin and figgy flavours, but not overly sweet, rather well balanced I think.

UPDATED: JUL 14, 2020 Appearance is a cross between cola and coffee. Visible sediment. Aromatic yeast. Notes of raisin, plum, prune and fig. Dark fruits. Toasted malt finish. Alcohol warmth. Brown sugar, molasses. Nice sweetness ties everything together. Bold and full mouthfeel. Exquisite drink.
