COMMERCIAL DESCRIPTION
We drew the colour blue for this year’s Rainbow Project, and set to work on the challenge, keeping our barrel aged beer in mind for 2018. We decided to go an entirely different route this time out and brew a lager with our new friends at Sante Adairius. It’s fermented cold and the theme follows through; we added heaps of cryogenically frozen hops! We’ve used an American lager yeast sourced close to Sante Adairius’ home in California. We’ve also taken some Mexican influence, with blue corn tortillas in the mash and blue agave syrup in the boil – which we aged in Tequila barrels beforehand for an extra flourish. We hope you enjoy Santo del Frio – Saint of the Cold!

From tap. Pours clear yellow. Small white head. Aroma is light fruity. Bitter, crisp hoppy. Citrusy. Mellow. Biter and citrusy. Solid hoppy finish.

Draught at Taphouse. Clear golden colored with a medium sized white head. Malty aroma of hay, hops and pine needles. Malty flavor of hay and hops with notes of pine needles and citrus. Hoppy finish.

Catch up notes from a Rainbow Project tasting 2017-09-29 It smells very very hopped for a lager. Lots of fruity flavours - to be honest, it doesn't smell like lager to me. But when I taste it: Oh Aye, it's a lager. The hops from the nose aren't so strong. Dusty like lager always is. Empty – lacking malt character. I've been drinking a lot (relatively speaking) of lagers this year, trying to figure the style out and learn to like it, so far without success. But this is definitely one of the better ones.

Threads a nice line between novelty and masterpiece. Does it matter that it uses cryogenically frozen hops? Not really. But does it matter that two top brewers collaborated to make a clean, light, slightly sweet lager with a lot of fruity hops? Absolutely, and this is a great, straightforward IPL.

Bottle from Bridgend Services, Freuchie. Pours pretty clear. Golden in the glass. Thin, white head. Aroma is fresh and grassy. Very light pineapple. Lemon drops. Syrupy sponge cake. There's a little tropical musk. Taste is sweet with zesty lemon cordial. Quickly turning crisply bitter with a real biscuit malt middle. Nice mouthfeel, it has a certain smoothness. Spritzy carbonation. Lasting pithy finish. Amped up, characterful lager. Tasty
