GRAINS

1 lbs. Dingemans Caramel Pils

FERMENTABLES

6 lbs. Gold Malt Syrup

HOPS

1 oz. Chinook (60 min)

1 oz. Cascade (1 min)

Yeast: Wyeast #1056 American Ale Yeast (with starter, prepared 2-3 days in advance).

Expected OG 1.045

Expected OG 1.012

Brewed April 14, 2005. Measured OG 1.045. Fermentation took off w/in 90 minutes.
Transferred to secondary after 10 days, April 24. Measured FG 1.010. (!!)
Sample tastes quite nice. Like a "green" Summit or SN pale ale.

Bottled May 8. Measure FG 1.010. This tastes great already.
AN "Extract Late" RECIPE

Make yeast starter 2-3 days ahead of brewing.

Steep grains for 20-30 minutes at around 155-160F in 1.5 gallons.
Add 1.5 gallons for 3 gallon boil.
Add hops as noted.
Add LME late in boil--at 15 minutes remaining in boil.
