beer biscuits

the yield of this recipe will
600g all purpose flour
12g salt
20g sugar
16g baking powder
450g unsalted butter
200mL beer
200mL sour cream
1 egg
water
1. combine all the dry ingredients in a large bowl
2. cut butter into cubes and work into the flour with your finger tips until the butter is the size of large peas
3. combine beer and sour cream and mix into the first bowl until just incorporated, being careful not to over mix, refriderate for 20 mins
4. flour your hands and a flat surface very well and place dough down, patting to desired thickness
5. using a cup or round cutter, cut biscuits
6. beat the egg with a little water and brush over the biscuits
7. tray the biscuits and bake for 5 mins at 400, then turn down to 375 and bake for another 15min
8. remove from the oven and allow to cool
