this is a an onion potato and
1 large onion, diced
2 potatoes, cut into large cubes
200mL chicken or vegetable stock
300mL sweet stout
1 tsp sugar
salt and pepper to taste
1. melt some butter in a pot and cook th onions partially covered on medium low heat until they become brown and "carmelized"
2. add the beer, stock, sugar and potatos and simmer partially covered for 30 mins, or until potatoes are very soft
3. puree in a blender, return to the pot, adjust seasoning(if needed), and serve
