Apologies for the scant detail and roughness of these instructions, it was a very early brew for me and a lot of the success of this beer is down to a good ingredient list and a lot of luck.|
*I added 1 teaspoon of gypsum to the mash water, mashed all grains for about 1.25 hours at 66C.
*Boil 1.5 hours, started with about 15 litres and ended with about 10.
*Chilled to 24C.
*Made up to 16 litres with filtered water.
*Pitched WLP004 and aerated well (would recommend a starter).
*Ferment at ~18C 2 weeks, secondary 2 weeks, bottle with 120g DME
OG: High (1.095+)
