Bok Choy and Buckwheat Dumplin

These are the dumplings from t
1 head bok choy
3 tbsp poppy seeds
1 tsp peppercorns, crushed (use Sichuan peppercorns if possible)
1 tsp chili garlic sauce
3 cloves garlic
2 cm cube of ginger
1 small onion
½ lb paneer (you’ll get this at an Indian grocery)
¼ tsp salt
2 cups flour
1 cup buckwheat flour
¼ whole buckwheat
1 cup water
Filling: Boil bok choy briefly. Squeeze excess water from bok choy. Add bok choy, poppy seeds, peppercorns, garlic, ginger, onion, paneer and salt into a food processor and blend into a paste.

Make dough from flour, buckwheat flour, buckwheat and water. Roll out flat and cut into round pieces.

Stuff dough with filling and bake for 15 minutes at 400F.
