Mash at 155 degrees and hold for 90 minutes. Add boiling water as needed to hold mash temp.
Primary fermentation was 10 days at 68 degrees.
Secondary fermentaion 10 days at 68 degrees.
Bottle with 489gms dry wheat malt extract boiled for 10 minutes in 4 cups water.
Be ready for a violent and turbulent fermentation from this yeast. A 6.5 gallon carboy will still blow off large amounts from a 5 gallon batch of this. If less banana esters and more clove esters are desired, lower the fermentaion temp by ~5-6 degrees.
