beer and onion jam

this might sound a little stra
5 large onions
1 cup white sugar
3 cups beer
1/2 cup malt vinegar
1 tsp salt
1 bay leaf
oil
1. slice onions very fine
2. heat a little oil in a large pot to medium
3. add onions and cover until they "sweat" and their volume reduces by around half
4. add sugar and salt, stir to combine and cook until disolved.
5. turn heat to high, add beer
6. bring to boil and reduce until the mixture gets thick and jammy
7. transfer to a sterilized jar and store
