UPDATED: JAN 1, 2015 Appearance: medium fluffy white head, dissipates quickly, light good color, very hazy Aroma: rosemary, very spicy, smells different than most other beers Taste: some sourness, tart, a different type of spice maybe pepper tasting, some bitterness on the end, a grass note too but different from hop grass taste Palate: average carbonation, light mouthfeel, a bit of a spicy bitter aftertaste Overall: this is my first gruit beer and itâ€™s definitely different, kind of a sourness and lots of unique spice dominate, totally different than most beers out there
Straw yellow, very light looking, clear.
Sage like, lavender, kombucha type acidity.
Ginger paste heavy, lemon grass.

Bottle shared by estover. I dug this. Pours a cloudy yellow color with a white head. Aroma of herbs/botanicals and ginger. Taste is well balanced. Slightly sweet with tea-like qualities. Refreshing.

Very floral nose with ginger and the bay leaves the brewer talks about on the label. Yep, rosemary as well. Very herbal. Massive dry texture and finishes with the array of spice toward the finish. Yes this is indeed a gruit that not many brewers do. Interesting.

16.9 oz bottle. Aroma is extremely floral, herbal--honeysuckle, basil, licorice, ginger are what I’m smelling. Pours hazy pale yellow with a medium white head with decent retention. Taste is floral, herbal, lightly tart (lacto?), finishing very dry with quite a bit of un-hop-like bitterness that lingers. Mouthfeel is creamy, carbonation fine, body thin. Very interesting and tasty.
