COMMERCIAL DESCRIPTION
Dont know what to call it besides a Brett Beer. This one gets aged for 3 months in oak barrels with Brettanomyces Lambicus, a cool yeast that gives this beer a wonderfully pretty aroma and flavor that everyone better like or else Ill look you up and teach you a lesson.

On tap at 2nd Shift festival. What a wonderful subtle brett beer. Saison spiced aroma with a citrus, funky taste. Perfect for St. Louis summers, and I could drink it all day long.

1/25/15. On tap at 21st St, STL. This was one of my favorite beers of my entire night in STL. Mrs. Owl would love this stuff - wish I had more time in STL to find bottles. I was surprised how much I liked this one. Golden pour with a nice off-white head. Nice tartness in the aroma, lightly sour, Brett, fruity, clean, lemon peel. Awesome flavor, just the right amount of sour, a light Smarties aspect, pale malts, Brett, fruity. Delish!

Bottle thanks to beernbourbon. Pours clear pale straw, medium white head, dissipates fairly quickly, good lacing. Aroma is Brett, oak, hints of white grapes, vinous qualities, fruity. Flavor is light tart, light funk, loads of oak, white grape, clean Brett. Light body, nice clean sour. I seem to be out ahead of the pack in terms of enjoying this one.

750 ml bottle. Pours a fizzy and hazy gold. Head is pretty massive at first, but dies to a finger or so before Im seated at the computer. Aromas are striking... Its not every day I say "Oh, man..." out loud when trying a beer and Im not quite sure why they tickled my fancy, but I pick up kind of a funky pineapple and lemon thing with a little grass and a hint of barn. Not a nose like every other saison, thats for sure. First sip reveals that it is a very thin beer... it has a lot of flavor for the ABV and mouthfeel of water, but it is still pretty thin. Lots of pineapple and lemon with a hint of brett funkiness in the finish. Its crisp and refreshing and if it were cheaper I would love this as a lawnmower beer. As is, its darn nice for those 95 degree days on vacation in St. Louis.

Bottle thanks to Chris. Pours a cloudy yellow with no head. The aroma is lacto, brett, oak, funk, lemon. Thin mouthfeel with nice tart lemon, strong brett, funk, oak, and light sourness. Very good.

Bomber thanks to trade with gregwilsonstl! Pours a cloudy golden yellow from the bottle with fluffy white head that dissipates to leave moderate lace. Aroma of funky barnyard brett, bit of lemony citrus, and almost musty fish notes. Taste is more toward the funk and the citrus, bright acidity, hints of malty sweetness. Really clean and well done, fantastic brett beer.

UPDATED: APR 14, 2014 Guest tap at Perennial. Pours a cloudy pale yellow-gold color with a small bone white head. Aroma of grapes, dry and bready malts, straw, farmhouse funk, lemon citrus, and a little yogurt. The flavor follows suit but doesnt quite come across as crisp and fresh as the nose. Light-bodied, with a dry, funky mouthfeel and medium carbonation. Really nice bretty saison. Could drink this one all day. Re-Rate: Yeah, so clean and nice. Citrusy, tart, dry, refreshing. Lovely.

seymour (1957) - Maplewood, Missouri, USA - FEB 2, 2013
Sampled on tap at the 2nd annual Urban Chestnut Wolpertinger party in a dimple mug. It poured a hazy straw colour with weak white foam. Enticing aromas of husky grains, black pepper, clove, noble-ish hops, composty hints of Brett. Delicious flavours of malt and tangy hops bitterness, mineral water essence, smooth acidity, slight sourness reminiscent of lemonade, complex Belgian and wild yeast characteristics. Light body, spritzy carbonation, well-balanced tart aftertaste which eventually finished bone dry. Table-strength but distinctive, extremely tasty. Excellent example of a Belgian farmhouse style. One of my favorites of the day. Id like a big bottle of this stuff, for sure.

Aroma of sweet green apple wheaty funky and citric, on the muted side though. Appears surprisingly clear and straw colored with sticky lacing. Taste is soft wheaty lactic sour plush mouthfeel. Not too dry definitely citrus resonates.
