Amber color with rich frothy foam. Dry woody nose with hints of oak, grapefruit and gentle phenols. Flavour is dry woody and grapefruity, with notes of goat cheese,smokey phenols, ripe green apple and oak. High acidity here. Musty mouthfeel. Almost puckering after due to the tannins and the dryness. Really complex.
Bottle courtesy of Ryan (thanks man!) at his May 2017 tasting. Pours a hazy orange body with thick white head and lacing. Nose is lemon, oak, funk and barn. Mouthfeel is sour lemon, oak, tart acidity, dusty basement and nice minerality.

2012 vintage bottle shared by Kyoto Lefty. Thanks! Tart, zippy nose of citrus, some light vegetable puree, rhubarb. Very hazy apple juice color. Flavors of moderately tart stone fruit, slight oxidation, then some sweeter fruitiness along with the wheaty notes.. Really a medley of tingling fruit. Thin body, mildly astringent. At a tasting and I count myself lucky to have been able to try it. Thankfully we were wise enough to crack it before we were too deeply inebriated. Lovely clear orange copper with a funky cork aroma. Bottle from the brewery. Grapefruit and leather in the nose. Cloudy gold with a good head. Great flavor of leather, old books, grapefruit, low level of sourness. Lovely balance with great citrus and lots of barnyard. Silky, with great, soft carbonation. Awesome. Wish I had another chance to drink these all side by side. Sexy bottle thanks to Sam some years back and again to toby at ratebeer winter gathering for a refresher. Pours out a dark golden almost orange with a ring of a head. Nose is nice light funk citrus some stone fruit even and some farmhouse dust. Taste is more of the light funky fruit notes and barrel.

Again, a fantastic pour, this one gushing lightly again and showing forth a bronze-golden robe, clear and well-carbonated with a large, snow white head atop with very strong retention for the style.
Winter seems to be the exact antithesis of Spring, though our bottle of Summer was off, so maybe that was even brighter when not off. Not that Winter doesnít have some bright notes; it does, full of apple, lime, kumquat, lemon and other beautiful brett qualities, but there hidden away against a very musty, almost cheesey and horsey character that ends with strong lactic notes and light hay/cheeserind/more horseblanket. Side-by-Side with the Spring, itís difficult to choose a favorite and the Winter might just prevail due to its uniqueness. Where the Spring is explosively, brightly full of Brett tartness and poignant tropical fruits, the Winter settles in for a much more subtle but all-encompassing lactic-wood-brett-must-basement type of quality, and only slightly less intense overall than Spring.
Itís got a bit fuller of a body than the rest, with strong lactic character and tons of horseblanket. Tight carbonation, as all show, with proper attenuation, of course, and a crescendo of flavors culminating in a very funky, very flavorful finish. Must, cellar, plaster, wool, mineral all persist.....incredible stuff. One to ponder, for sure.

Cloudy dull light amber color, flat, carbonation is gone. I like the aroma, but itís mainly cheesy. The mouthfeel is acidic and getting lightly oily; good cellar character, horseblanket, some orange peel, and astringency, but the missing carbonation plays negatively.
Still a very enjoyable beer.

Cloudy amber color, with good sized head, persistent. The aroma is fresh and very pungent, with dominating cellar smell, cobwebs, and lemon peel, and late manure.
The first impression of the flavor is about citrus fruits, lemon and pink grapefruit; the mouthfeel is dry and acidic, it seems very young and fresh, well carbonated; still, itís full of Bretts, leading to an astringent and very sour final.
An aggressive and lively Gueuze.
750ml bottle @ Alexís. Pours a slight hazy amber with zero carbonation. Nose of barnyard funk, ripe fruits, light grape, and some sesame?. Flavour is funky, fruity, musty and cobwebs.
