3 Fonteinen Oude Lambik is the result of a specific brewing process with a high proportion of unmalted wheat, spontaneous fermentation in an open coolship, and slow and complex fermentation and maturation in oak barrels of different sizes and shapes. This beer is completely flat as the carbonation evaporates through the wooden staves. Please note the age of the sample you are reviewing when entering your rating. 3 Fonteinen Oude Lambik is considered all 3 Fonteinen lambic above 18 months of oak barrel maturation after brewing, and every blend of young and old lambic, prior to bottling and bottle evolution to geuze. It is poured in some selected places, and in the lambik-O-droom on dedicated hand pumps. As it is unfiltered and unpasteurised, the time between the oak barrel and the serving moment is kept as short as possible.

16/12/2011 Brasserie 4:20 (tap) 40 months old + 52 months old. Bevuta al Sour Winter Festival. Ambrata carica, lievemente torbida (pi scura, quasi arancione, la 52 mesi), schiuma assente. Al naso sentori di mela (matura grattuggiata, dolcissima, nel caso della 52 mesi), note acidule, sfumature balsamiche. In bocca acida, con note balsamiche, mielose, bilanciata in maniera magistrale (pi la 42 mesi), molto persistente in bocca. Corpo medio, consistenza vinosa, carbonazione quasi assente (pi pronunciata nella 52 mesi). Una esperienza unica. I voti: 4.5 per la 40 mesi, 4.2 per la 52 mesi. 4.3 la media.

Hopfig-suerlicher Antrunk, der mit seinen Beinoten aber angenehm ausfllt. Wenig frisch, fast laff. Im Verlauf wird die Suerlichkeit fast unwichtig, der muffige Hopfen strker. /8/6/6//7

Bottle from the source. Hazy golden amber color see pic please. Dusty musty horse blanket aroma. Taste is sour with stone fruit and decent funk. Delicious.

Draught at the tasting room, courtesy of Armand - thank you sir! Brewed in January 2009, tasted in June 2010. Classified as a jonge lambik by Armand, but meets Ratebeers definition and description of an oude lambik. Slight haziness, variegated color from golden brown to yellow. Small white head that disappears rapidly. Aroma of slight dust and must,, lemon peel. Taste is cour citrus, acidic and very dry, especially at the finish. Wonderful!

Pours bit darker blonde/light amber. No head. Smell is full, funk, wood. Mild sour . taste is very full , dry, oaky. Very full wood ! Dry mouthfeel, nice as expected. Malty aftertaste

Tap at Grote Dorst. Hazy dark golden color with no head. Aroma is burnt bread, wood, not so much funk. Taste is burnt bread, some milky yeasts. Oily mouthfeel. Flat. Okay, probably one of the last pours of the bag, but still: it showcases the 3 Fonteinen character.

Heel donker geel bijna oranje. Een intemse geur van paardestal met een licht zurig tintje. De smaak is droog, haverig en deegachtig.

From notes. Enjoyed on draft at the Drie Fonteinen Restaurant on November 12. This one had an advertised age of 6 months. The pour is a dark orange, almost brown, with no head at all. This is syrupy and looks nothing like I was expecting for a lambic. The aroma is very sugary sweet. There is a strange bitter malt going on. There is a light Bandaid thing happening, but its just interestingly sweet. The flavor is definitely syrupy. This is sugar sweetness, a strong barrel, and just a strange flavor overall. The mouth feel is very heavy and syrupy. There is no carbonation and a lingering medicinal sweetness. I will never understand the lure of young, unblended lambics. Not my thing at all.

Draft at brewery. Decanted from a barrel pull by Armand. 18 months old. It pours a clean golden color with no head. Aroma is mildly funky, grassy, lemony with a light vanilla oaky note. Taste is also lightly spicy oaky, with mild vanilla sweetness, medium tart and lemon peel. Medium bodied with soft carbonation. Overall, good unblended lambicalcohol,

Draught at the brewery. Pours hazy amber with a small and quickly dissipating white bubbly head. Aroma is light cellar and oak notes, medium cracker malt, tart lemon. Flavor is moderate tartness, lemon notes, light cracker malt, cellar and oak notes with a dry finish. Light body and nearly still.
