[Bottle] Pours a very light shade of yellow without much head to it. Sweet light malty nose is very faint. Not getting much of a Wit character from it in the aroma. The taste is grainy and includes a bit of lemon mixed with pale lager notes. Green apple and slight oxidation is evident as this warms up. Very light. I would avoid this in the future. cubs (10635) - Fort Collins, Colorado, USA - OCT 26, 2011
Bottle @ home. Slightly hazy, whitish yellow appearance with a fairly small white head. Lemon citrusy, coriander spicy, slightly yeasty, light wheat malty aroma. Fairly sweet, predominantly orange citrusy, weird spicy, slightly skinked wheat malty flavor. Not very good. DiarmaidBHK (4907) - Lewisburg, Pennsylvania, USA - OCT 22, 2011
Bottle from plaza liquors. nose smells like cheese that’s a bit off. Pours hazy yellow with no head to speak of. Tastes like watered down lemon blend. If you’re going to call the damn thing after monk’s, it should taste really, really good. Dixonian (1562) - Plano, Texas, USA - OCT 16, 2011
Cloudy yellow with no head. Aromas of citrus peel, spice, and feet. Taste is more spice, citrus, and wheat. Monk’s? Yeah, right. Ughsmash (7508) - Pewaukee, Wisconsin, USA - OCT 13, 2011
Bottled. Poured crystal-clear bright golden with a dense cap of white head. The aroma picked up sticky-sweet honey and bready sweetness topped by a thick dose of spices (cloves, orange zest, and coriander above all else).. more orange was nice right on the back. The flavor found light honey and some pale malts at the core.. a similar blend of sweetened-up spices around.. some green apple on the finish.. OK overall. Light-bodied and well-carbonated on the palate.. too sugary and heavy-handed for the style, but it was drinkable.

Pours clear yellow with slight white head, aroma has notes of biscuit, some nice apricot, peach, toffee, and some earth. Taste is some nice spice, biscuit, lemon, touch of peach, some nice spice and toffee, finishing spicy and dry. Ibrew2or3 (8614) - Tempe, Arizona, USA - OCT 5, 2011
What is this? Pecos NM?!? What!?! 12oz bottle pours out clear pale gold with micro thin white head. The aroma has faint amounts of grainy malts and yeasty spices as well as a wealth of estery sweet corn mixing with a distinctive white wine aromatic. The taste is similar with a white wine fruity, semi tart and dry quality nuanced by mild yeasty spices, a touch of orange peel, grainy malts and a sense of corn kernels into the finish. Wow! Tasty and interesting and a bit odd too. thirdeye11 (6160) - Dallas, Texas, USA - SEP 7, 2011
(12oz bottle thanks to Dixonian) clearish very pale yellow, lasting fine white bubbles. Nose of burnt popcorn, feet, and body odor funk. Some grape skin and sulfur as well. Taste is spicy, cinnamon, allspice, old wheat, and a linger of apples. gringo332 (640) - Richardson, Texas, USA - SEP 2, 2011
Pours a cloudy straw yellow with white fizzy head. Aroma of wheat, citrus peel, light bubble gum and banana. Flavor is very much the same. Mouth feel is light with high fizzy carbonation. Not bad. GreatLibations (1854) - Last Supper, Arizona, USA - AUG 26, 2011
Not true to style. Pours a lemony yellow color with a spritzy head that dies off quickly. Smells of biscuits with a touch of citrus. Medium nectar with good carbonation. Not much spice to speak of. Not a bad beer, just not the style proposed.
