We used equal parts barley and wheat malt and fermented with ale yeast and a small amount of Brettanomyces. After primary fermentation, we added a large measure of lactobacillus and let the beer naturally acidify for more than 4 months before bottle conditioning with a fresh pitch of Brettanomyces.

Light yellow color with no head. Almost champagne like. Nose of lemon zest. Taste is tart lemon and wheat. A tiny bit of funk. Overall really smooth and very quaffable.

Bottle thanks to Cody. Pours a cloudy yellow with small frothy white head. The aroma is strong lacto, lemon peel, and oak. Thin mouthfeel with light funk, citrus, tart finish. Very good.

750 ml. corked and caged. Number 65 of 480. Pours a very short lived white head, over a effervescent, hazy yellow (SRM 3) body....nose is acid, hints of lemon, wheat....taste is moderate acid, light lemon, finishing with a moderate sourness....mouth feel light and watery, no alcohol, carbonation high as is acid. This meets the basic guidelines for the style. The Brett is rather hidden, and the lactic acid is on the light side. BJCP 7/3/14/5/6

Bottle. Head is initially small, fizzy, white, fully diminishing. Body is clear light yellow. Aroma is lightly malty (grain, corn starch), with notes of sour apple, lemon juice, light notes of ammonia and dish rag. Flavor is lightly to moderately sweet, moderately to heavily acidic, lightly bitter. Finish is lightly sweet, moderately to heavily acidic, lightly to moderately bitter, slightly unclean. Light body, watery texture, fizzy carbonation, moderately astringent. Its quite sour, which is good, but unfortunately its not very clean or interesting...rough/raw malt character and a mild solventy note have to be overlooked to be able to enjoy it, and theres not much else on display aromatically other than the usual apple/lemon notes common to the style. The Brett doesnt really make itself known (unless this strain is yielding the dish raggy odor). Very light, watery, and fizzy, with assertive astringency. If sourness alone is all you need, thisll do the job...its not exactly cheap though, at $10/750mL. Id been curious about the AC Golden line (beyond Colorado Native, which didnt impress either but it was just another pale lager so hard to tell if they had any "crafty" cred), but was not willing to blow over $20 on those fruity beers. So at least now my curiosity is satisfied and I can go back to scrolling past this pseudo-micro Coors label.

Bottle 384. Pours cloudy straw yellow with instantly settling, coarse white head and no lacing. Aroma is fairly tart, acidic, funky. Flavor is moderately tart, acidic, with a tart wheat, citrus finish. Gets fruitier as it warms. Moderate carbonation, medium-light body, and moderately dry finish. Pleasantly surprised by this.
