This dark brown Serafijn has a spicey herbal character and a soft bitterness. The Achilles brewery has a unique way of achieving an even heating of the wort: using no direct flame or steam, the wort is pumped through a spiral that sits in a tub of hot water!

Commenons par dire que la classification de la bire sur le site est errone. Cette bire nest pas une belgian strong ale mais une double, en fermentation haute et refermentation en bouteille. Point. Elle doit tre dguste en tant que telle. Si elle fait 8 % abv, ce nen est que mieux, et on le verra lors de la critique, mais ceci nen fait aucunement une strong... Couleur brun roux trs jolie. Clart nette. Bulles moyennes partout et assez vives. Mousse beige paisse mais gros flocons... Armes jolis de pain complet, feuilles mortes, prunes bleues jeunes, avec une lgre touche danis toil. 1re bouche la texture souple, mais la saveur assez carre, sur le malt caf avec un houblon assez rigide. Arrire-bouche plus agrable et fondue. 2me belle bouche plus nuance, avec du malt torrfi, du houblon en fleur et des fruits noirs. 3me de plus en plus agrable, ce qui est un gage de qualit. Arrire-bouche fondue et bel quilibre entre force et saveur. La longueur souvre sur de superbes accents, entre le malt, la levure et un ensemble de houblons assez complexes qui harmonisent vraiment lensemble. On ne peut quadmirer une telle entre dans la longueur. On poursuit tranquillement sa route ensuite en dcouvrant dautres nuances...., que le nez dveloppe aussi par quelques touches dpices dures. La levure est structure et tout fait adapte une double. Lalcool est bien dos, aide clairement ds la 3me bouche. Trs trs bien. La finale dveloppe encore le sujet, en vient traiter des questions philosophiques ayant trait la saveur. Nous sommes dans le trs haut de gamme surtout pour une double. Conclusion: cette double est une trs grande bire, qui tmoigne dun grand savoir, et qui encourage vraiment dcouvrir les microbrasseries. Cette bire fait preuve dun grand caractre et elle va trs nettement a mas, ce qui est pour moi un vrai gage de valeur. Nous avons devant nous un bel avenir dans la bire. Merci Achiel (van de Moer).

This is another very nice brew from this brewery. It pours with a very large foamy head and an orange hue of brown colored body, where the very bottom center of the glass has a beautiful glow from the light. Otherwise, you cannot see through it at all and the head never really fades, just leaves a thick lacing across the whole surface. The head just has these little bubbles that are constantly popping, little by little, so fun to look at. Aroma starts with a fruity, esters filled brown sugar smell. There is a light bit of smoke underneath that, which I just love. Hints of sweet raisin and just a faint touch of dry herb. Taste starts with strong fruity esters and finishes with a dry herbalness and a very light bitterness from the herbal flavor. This dry bitter herb sits around for a bit and its hugged by fruity sweetness. It has a soft mouthfeel and very, very easy to keep drinking. The body is just medium, the carbonation is not strong, just goes down, as if it werent even there. I do not know what it is but this brewer hits the sweet spot with me.

Bottle 2005 at home. Wow!!!!! This is awesome, didnt expect that at all! Pours a hazy mahogany colour with a tan head. Lovely aroma of caramel, raisins, lots of nuts, a little bit of yeast and a acidic hint, hits the nose. Flavour is smooth with loads of nuts, caramel, ripe dark fruits and a little yeast, balanced with a nice bitter note and a touch of alcohol. A bit thin bodied tough.

Bottled. Dark red colour, small beige head. Strong plummy aroma. Strong plum and caramellish malts in flavour. Licorace also noteable in finish.

Pours a dark brown with a big long lasting head. Sweet with soem breadiness. Aromas of dark fruits, prunes & plums and alcohol. Port like slightly vinous. Sweet dry finish. Medium to full bodied. Very nice beer and not as bitter as the Serafijn Blond.

Cloudy brown color. Raspberries, apples, oranges, flowery nose. Smooth, creamy mouth of chocolate raspberry juice. Sweet velvty finish. WOW this beer was really rounded. Very drinkable. Another great random find.

A very fruity smel and a good and rather complrx taste makes this a very nice beer. Rolling the beer over your tongue makes this a very nice sensation.

Brown / dark orange colour, high strong head. Caramel and specy aroma with nice spice. Smooth chocolate note following a deep malty but not too sweet finish. Nice overall taste.

Bottled. Amber colour. Malt, banana and coca-cola nose. Bassets Tidbits, cocoa and slightly licoricy flavour. Rich malty. Long finish. Cousin of Urthel?
