THE ALE: Conditioned on oak cubes used by Spirit of Texas Distilleries to age their Pecan Street Rum, this ale has complex sweet oak, rum flavors with a warm alcoholic finish. Pair with dark chocolate desserts or bold cheeses. THE STORY: The power of flight can be achieved through Zen-like focus and concentration. This ale will not help.

Bottle:   Deep caramel, thin sudsy sandy head, little lacing.   Dark pitted fruit on the nose, bready, in the dark sense, sweet, caramel malts, a bit rummy, with soft wood and noticeable alcohol.   Bright dark pitted fruit and dark bready malts up front, alcohol, with a woody and soft rum background.   Still seems very green, young, and slightly brash.   Body and mouthfeel are moderate.   Heavy barnish and musty notes on the finish, bready, dusty, some dark pitted fruit, wood, rum, and alcohol.   Lots going on, still seems a little young even.   Decent little beer, or should I say big beer, but remains a little green and brash as is.   Otherwise enjoyable.

750 ml bottle from Tavour batch 014 BO 3/14/16. Nose is light vanilla, toffee, raisins, bubblegum, and light tobacco. Clear rusty red with a small beige head. Flavor is sweet vanilla caramels with nuts and a hint of rum.

Pours a thin head on a dark brown body.
Aroma is oak, nuts, caramel and dark fruit.
Taste is brown sugar, then fruit sweetness. A little nutty...
Texture is soft.
A mellow quad, but with good flavor.

UPDATED: MAY 17, 2016 Bottled on 7/6/2015, batch no. 011, 1 pint 9.4 ounces. Pours a dark Amber with no head or lacing and minimal carbonation. Has a strong musty mouthfeel. Tastes of old bitter apricots and prunes with and an aftertaste of moldy fruit. Smells of heavy fibrous fruits.

2012 Batch 002 Bottle #1187. The beer pours a murky dark brownish-amber color with a medium foamy light beige head that dissipates gradually to a film. Small patches of lacing on the glass. Aroma of caramel malt, fruit and yeast. Full-bodied with flavors of dark fruit, earthy yeast and grainy malt. The finish is sweet with a fruity yeast aftertaste. Decent overall.

2014 bottle. Pours a dark murky reddish-brown with a big off-white head that lingers. Sweet aroma, of dark fruits, booze, malt, brown sugar. Taste is metallic and boozy, of malt, rum, dark fruits. Lingering fruity sweetness and malt that ends watery. Not bad.

A decent quad, nothing too memorable. Pours a clearish Amber with a thin tan head. Smells of plums. Taste is more plumbs, with a bit of vanilla, and an average finish. Had in the bottle.

(bottle - corked & caged 750 ml) Murky copper with a thick tan head. Sweet and fruity aroma. Lots of plums and some raisins as well. Flavor is very sweet with lots of dark fruits and tons of caramel malts. Surprisingly light and thin bodied for nearly 11%. Really sweet and kind of nice.
