COMMERCIAL DESCRIPTION
THE ALE: This smooth ale tastes citrusy with yeasty notes and a hint of peppery spice. Its dry finish and mild carbonation make it perfect for pairing with grilled chicken, rich fish dishes, and cheeses like camembert and brie. THE STORY: Philosophizer was a common term used to describe Del. He often came up with the perfect solution to a complex problem while drinking a beer and watching the sunset. Donít be surprised when you enter into deep philosophical debates after opening a Philosophizer. Just pop one open, pour, sip, and ponder.

Large shared bottle. Very effervescent with a relatively large, semi-durable white head. Very low funk for style. Nicely fruity. Lively, crisp and dry. O: great choice as a session saison.

Starts citrus and contues with very zesty lemon and pepper flavors. Finishes very dry and I get a small/very small metallic taste disappears quickly. I wish someone would make a legit true to style saison that was lower in abv, but this beer is true to the times of today with high alcohol content and a crazy good yeast flavor.

Dark yellow, lots of big bubbles, generous off-white head that lasts for a while and leaves little lace. Aromas of black pepper, bright citrus and white wine grape. Grape and apple sweetness, modest tartness with pepper notes, citrus and a whiff of toast. Light to medium body, huge carbonation, prickly mouthfeel and a light fruit sweetness in the finish.

750 ml. corked and caged bottle. 7.8% ABV per the label. Batch 010. Bottled on3/20/2014. Pours a thick, well retained, ivory head, with extensive Belgian curtain lacing, over an effervescent, slightly hazy amber (SRM 9) body......nose is light colored fruits (pear, apple), moderate spice, light cereal malts, hints of herbal hops.....taste is slightly sweet with pear, apple tones, moderate toasted malts, leading to a peppery, moderately dry, slightly hopped finish.....mouth feel, light of medium body, slight alcohol warmth, good acid, no astringency, high carbonation, with slight creaminess. This recipe has been changed with the large drop in the ABV. This version is a very basic Saison. It could use more phenolics, particularly pepper towards the finish, and a larger ester component would be another improvement. A different yeast or a higher fermentation temperature would be helpful. On the positive side, it tastes good, and has incredible carbonation, which is spot on to the style. BJCP 7/3/14/4/7

Yellowish color, moderate head, decent lace/retention. Aroma is yeast, citrus, pale malt, spices. Medium to light bodied, somewhat dry. Kind of off for the style.

Cloudy orange color , big off-white head. Aroma of yeast and fruits . Malty taste with similar to aroma notes. High carbonation , full body. Not my favorite but very interesting brew.
