Vintage Monks is a blend of our Trappist inspired ales which have spent up to two years aging in oak wine barrels. Each barrel imparts unique flavors of red wine, tart fruits and lovely funk. The blended result is a wonderfully complex ale that is beautifully balanced. Pairs well with tangy cheeses, rich meats, fried foods and fruit-based desserts.

Bottle at Perís Almost gone tasting, March 2017. Wow I donít get this one...makes me think of a banana vinaigrette combined with a caramel flambe. Eek. Pours a dull mahogany with a light brown head. Maybe the base beer was good, but gets overwhelmed by tannin, barrels and sourness that creates an almost undrinkable mess with vinegar, spice, oak and tannin.

My Bottom Line:
Acetic acidity, bourbon-laced wood and earthy tobacco canít seem to gel in this flaccid barrel-aged concoction.

Further Personal Perceptions:
-A ring of foam circles the cloudy dull red brown.
-Mouthfeel is a bit vinous, but mostly limp.
-The vinegary character is overdone.
-The base beer has been nearly entirely consumed by the barrelís microflora.


Lubiere (13780) - Ottawa, Ontario, CANADA - MAR 24, 2017
A hazed dark amber ale with a thin mocha head. In aroma, sweet fruity malt with light bourbon barrel notes, bubble gum, nice and smooth. In mouth, a nice sweet fruity malt with light acidity, light cork, grapeskin, nice and complex. Bottle at Perís Almost gone tasting, March 2017.

Bottled at Ottawa gathering. Cloudy amber, small head. Oaky vinous nose. Tart with medium body and rounded mouthfeel. Woody tartness, slight marzipan, red wine. Peppery finish. Elegant and tasty.

At Hopishop 2016. Aroma of peat, red fruit, smoke, oak and tart. Taste has mild tart, smoke, red fruit, oak and lacto sourness. This beer is a mess, but lickily a somewhat tasty one.

Bomber sampled @ HopisHop B.U.M.B. 2016. 2013 Vintage. Dark brown, little bubbles. Nose is very oxidized, vinegar, sour cherry, acidic, varnish, this aint right even for a Wine BA beer. Taste is flat glue, varnish, acid, nail poolish, rubbish cherry & unripe fruit. This clearly ainít right. Varnish & glue body. Surprised at this being currently a top 50 Abbey Dubbel on RB, maybe a bad bottle?

This kind of borders on a Flemish brown and itís very balanced. Neither too sweet nor tart, but quite drinkable.

Taste of red wine, dry, tart but almost sweet. Strong oak flavor. Wonderful body and funk of flavors, not to be missed. Savored the bottle over three days.Batch NO: 004 vintage 2013 bottled 3/10/2015. VERY hard to find in Austin unless you know the craft convenience stores. This one came from Sunrise mini mart 1801 W ANDERSON LN Austin tx.
