Als „Kräusen“ beschreibt der Bierbrauer die vielen Schaumblasen, die sich während der Gärung des Jungbieres bilden. Die Zugabe von einer kleinen Menge solchen Jungbieres zu einem bereits ausgereiften Bier wird als „Aufkräusen“ bezeichnet. Durch das Aufkräusen wird die volle Geschmacksreife des gelagerten Bieres um die Spritzigkeit des Jungbieres ergänzt.

Aecht Schlenkerla Kräusen ist ein bernsteinfarbenes, unfiltriertes Lagerbier mit leichtem Rauchgeschmack. Es reift in den tiefen Stollen unter dem Bamberger Stephansberg und wird kurz vor dem Ausschank mit klassischem Aecht Schlenkerla Rauchbier aufgekräust. Süffig und mit nicht zu viel Alkohol ist es die ideale Erfrischung für die warme Jahreszeit.

English Translation:
"Kräusen" describes the bubbles that form during the fermentation of green (young) beer. The addition of a small amount of such green beer to an already mature beer is called "Kräusening". Kräusening adds the full flavor maturity of the stored beer to the liveliness of the green beer that is added.

Schlenkerla Kräusen is an amber, unfiltered lager with a slight smoky taste. It ripens in the deep tunnels under Bamberg until just before adding the classic Schlenkerla smoked beer. Tasty and not too much alcohol, it is the perfect refreshment for a warm season.

February 15, 2017. On tap at Akkurat.
Light hazy golden with a creamy white head. Aroma is smokey and malty with a meaty note, toffee, fresh bread crust, grain and hay. Light to medium bodied, average carbonation. Finish is smokey, light bitter with a touch of grass and hay, light to medium malty sweetness with bread and hints of toffee.
Quite nice, prefer the ones with a slightly heavier malt character though.

Pours hazy amber with frothy white head. Moderate head retention, some lacing. Little smoky , malty, roasty, grilled meat nose. Medium body, average carbonation, oily texture. Taste is smoky, malty, little ripe fruit notes. A bit palate saturating.

UPDATED: SEP 30, 2016 Colore biondo limpida con schiuma biancastra molto compatta e persistente. Aroma lieve di affumicato. Al palato ancora inizia affumicata con sentori di pancetta, ma svaniscono subito. Finale amarognolo un po’ debole. Corpo leggero, carbonazione medio bassa. Discreta ma le. Manca qualcosa.

(live at the Schlenkerla) Almost cloudy, ruby amber colour with a firm mid-sized and slightly beige foamy head. Moderately smoked malty aroma with the impression of smoked ham, even slightly nutty, also slightly grainy with a whiff of herbal, old world hops in the background. Rounded bitter-sweet flavour, light to almost medium bodied with a well-carbonated mouthfeel. Moderately smoked malty taste with hints of smoked ham and sausages, cereals, backed by herbal hops; lingering bitter-sweet finish. Very balanced and more-ish Rauchbier. 12.VIII.16

Gravity pour from the barrel @ GBBF 2014. Slightly hazy amber pour with a small head. Nose is substantial and personable. Fat smokiness. baked ham. Brown sugar. Flavor is less smoke-heavy, a bit more subtle. Mellow crystal malt. Baked bread. Light lemon accents. Soft smoke. Palate lets the beer down a bit - watery and under carbonated. Feels a touch lifeless. Only OK - would love to have tried this in better condition.

Keg at the GBBF 2016. Golden with a frothy off white head. Nice smoked bacon aroma. The taste has hay, beans and bacon with a woody smoked finish. A bit weird, but lovely.

UPDATED: JUN 15, 2017 Barrel at the brewery. Hazy orange color with eggshell head. Aroma is smoky ham, lots of sweetish pale malts, earthy hops. Taste is a crisp Helles, sweet maltiness feeling paired with a light ham smokiness, a bit herbal as well. Low carbonation, with a solid earthy bitterness in the finish. A great summer sipper! 7-4-8-5-16
