Als „Kräusen“ beschreibt der Bierbrauer die vielen Schaumblasen, die sich während der Gärung des Jungbieres bilden. Die Zugabe von einer kleinen Menge solchen Jungbieres zu einem bereits ausgereiften Bier wird als „Aufkräusen“ bezeichnet. Durch das Aufkräusen wird die volle Geschmacksreife des gelagerten Bieres um die Spritzigkeit des Jungbieres ergänzt.

Aecht Schlenkerla Kräusen ist ein bernsteinfarbenes, unfiltriertes Lagerbier mit leichtem Rauchgeschmack. Es reift in den tiefen Stollen unter dem Bamberger Stephansberg und wird kurz vor dem Ausschank mit klassischem Aecht Schlenkerla Rauchbier aufgekräust. Süffig und mit nicht zu viel Alkohol ist es die ideale Erfrischung für die warme Jahreszeit.

English Translation:
"Kräusen" describes the bubbles that form during the fermentation of green (young) beer. The addition of a small amount of such green beer to an already mature beer is called "Kräusening". Kräusening adds the full flavor maturity of the stored beer to the liveliness of the green beer that is added.

Schlenkerla Kräusen is an amber, unfiltered lager with a slight smoky taste. It ripens in the deep tunnels under Bamberg until just before adding the classic Schlenkerla smoked beer. Tasty and not too much alcohol, it is the perfect refreshment for a warm season.

Draught (Schlenkerla, Bamberg) - Amber with a slight haze. Fruity, smoky and hoppy aroma with peach, ash, tangerine and caramel. The taste is refreshing, hoppy and moderately smoky with notes of orange, chocolate and ash standing out.

On tap at the source, pours a hazy medium honey color with a light tan head. The smell is to toasted malt, mild smoke. The taste is as is smells...mild sweetness sending smokey and dry. A nice summer brew. Light in body with elegant carbonation.

At the source in Bamberg-Germany, from gravity keg. Pours amber hazy color, medium gassy off-white foam. Nose: mild smoke character, with some malty distinctive notes. Floral too. Nice!. Mouth: soft carbonation, almost flat which makes it perfect for drinking sessions. Medium body. Bread crust, herbal end. The softest smoked beer of my trip and one of the best I have ever had here in Franconia. Apparently I was very lucky to find it.

Draft at GBBF 2014 - London. Day 2. Pours clear, deep gold with a foamy, mostly white head. Rich smoked malt nose with accents of bread and berry. Light-medium sweet flavor with further smoke, some mild candied ham, dry bread. Light bodied with fine to average carbonation. Lingering dry and smokey finish with a bit more ham and honey. Wonderful.

Draught. Brown colour, small foamy white head. Aroma is smoked, a bit ashy along with some ryebready and strange sweetness to it. Flavour is very similar in a good balance. A bit on the sweeter side, but still a nicely balanced brew.

Wooden barrel dispense at GBBF ’14, day 2, 13/08/14. Clear golden with a moderately appointed white head. Nose is bready, spice, smoke, more bread focussed than other Schlenkerla beers. Taste comprises smoked malt - fair subtle, bready, light gammon, spice. Medium bodied, fine carbonation, semi drying close with a smokey linger. Decent rausch.

GBBF Day 2. Keg. Thanks to Harrisoni for the share. Almost clear gold - amber beer, good pale cream colour head. Palate is light and dry. Mild fine carbonation. Light dry creamy malts. Well integrated white smoke, not overpowering. Whisper of marmalade. Light and very dry finish. Not bad.
