Als „Kräusen“ beschreibt der Bierbrauer die vielen Schaumblasen, die sich während der Gärung des Jungbieres bilden. Die Zugabe von einer kleinen Menge solchen Jungbieres zu einem bereits ausgereiften Bier wird als „Aufkräusen“ bezeichnet. Durch das Aufkräusen wird die volle Geschmacksreife des gelagerten Bieres um die Spritzigkeit des Jungbieres ergänzt.

Aecht Schlenkerla Kräusen ist ein bernsteinfarbenes, unfiltriertes Lagerbier mit leichtem Rauchgeschmack. Es reift in den tiefen Stollen unter dem Bamberger Stephansberg und wird kurz vor dem Ausschank mit klassischem Aecht Schlenkerla Rauchbier aufgekräust. Süffig und mit nicht zu viel Alkohol ist es die ideale Erfrischung für die warme Jahreszeit.

English Translation:
"Kräusen" describes the bubbles that form during the fermentation of green (young) beer. The addition of a small amount of such green beer to an already mature beer is called "Kräusening". Kräusening adds the full flavor maturity of the stored beer to the liveliness of the green beer that is added.

Schlenkerla Kräusen is an amber, unfiltered lager with a slight smoky taste. It ripens in the deep tunnels under Bamberg until just before adding the classic Schlenkerla smoked beer. Tasty and not too much alcohol, it is the perfect refreshment for a warm season.

Draft at Bavarian Lodge. In a dimpled mug, has kind of a light brown color, thin lacy layer of foam. Smoky smell but not in an obnoxious way. A bit of cheese rind and barbequed beef, in my opinion. Still has a big smoky flavor, most like a Gouda cheese rind, but also like a Cold-eeze cough drop. You know, kind of medicinal yet minerally. And I’ve always held that Cold-eeze was like sucking ona roll of pennies. Yeah, that’s it. Zinc. You have got to really like smoked beers to enjoy this, and luckily I do, in small doses anyway. However, some tasty German malts comes in here, more detectable than the other Schlenkerlas I’ve had. And yeah, a bit of a medicinal taste. But I can’t help but want to try it.

Aromat młodego piwa przejawia się w postaci lekko jabłkowej kwaśności. W smaku podobnie. Trochę puste, wodniste. Jakoś nie do końca mi przypadło do gustu.

draught at Schlenkerla Bemberg. Deep golden with a creamy white head and a promising smoky nose. Malty start with shy smoky hints, hints of honey and some shy roasetd malt flavours plus earthy hops and more shy smoke. Quite subtle smokyness, nevertheless very pleasant. Easy drinking summer beer.

500ml on tap at the brewpub in Bamberg. Aroma is light roasted malt, coffee, bacon. Appearance is slightly cloudy amber with a fine white to brownish foam. Taste is light sweet with hints of bitterness. Soft carbonation. Slightly watery. Great.

Tap (8.WFDP, Wrocław). Delicate smoked with lager nature but definitely ham-smoked notes are very characteristic of the brewery.

Pours haze golden/ copper colour, with off-white/white head. Aroma: smoked, ham, bacon, herbal notes from hops. Flavour follows aroma, with notes of ham, smoked bacon, hint of toffee, gentle fruity esters, herbal hop notes. Fi ish is dry, slightly bitter, body is moderate medium, texture soft, almost smooth, carbonation is medium.

At Akkurat. A bit hazy light amber with a creamy head. Aroma of smoke, bread, malt and some meat. Similar taste. The body was medium and the bitterness low. Nicely drinkable.

Light hazy golden with a creamy white head. Aroma is smokey and malty with a meaty note, toffee, fresh bread crust, grain and hay. Light to medium bodied, average carbonation. Finish is smokey, light bitter with a touch of grass and hay, light to medium malty sweetness with bread and hints of toffee.
Quite nice, prefer the ones with a slightly heavier malt character though.

Pours hazy amber with frothy white head. Moderate head retention, some lacing. Little smoky , malty, roasty, grilled meat nose. Medium body, average carbonation, oily texture. Taste is smoky, malty, little ripe fruit notes. A bit palate saturating.
