Æppeltreow Winery’s Cyser Rosé is made from local honey and small bitter apples. A classic combination from Valhalla to Eden. Blood red crab apple juice makes this mead blush. (Or is it just modest?) Dry. Tannic. Refreshing. Take Cyser Rosé on your next raiding party!

Sampled at ÆppelTreow Winery. The mead was semi-dry, tart, and tannic. This was one of the highlights of the trip, besides the cask proof bourbon. The crabapples were quite nice in this mead, adding a lot of tasty tartness to the sweet honey. I would definitely get this again.

Small sample at the cidery. Pours a pale pink-gold, no carbonation (still)...deep honeysuckle and floral aroma at first, crabapple notes take a couple of minutes to come forth, a hint of really pungent spice (myrrh?) lingers while sipping...very sharp and tannic flavor at first, totally dry, with a hard chalky-mineralic finish; on subsequent sips (as my server noted) a little bit of sweetness does show up, and I suspect there’s a lot of complexity here if one takes the time and has more than a small sample - and as I got a bottle of it to go, I’ll be checking it out soon to see if I’m right. As is, one of the more interesting cider-mead tastings I’ve had of late.

375ml bottle. Nice and dry, spice notes, good mead character with a mout coating dryness miing with some earthy and tart apple.

Pours red with yellow edges. Aroma is light apple and hints of earth. Flavor is wonderful. Tons of tart crab apple. Light earth and a hint of red berry. Drys out in finish. I like it.

Enjoyed via a tasting at the winery. Pours a reddish gold with little to no carbonation. Smells of strawberries, cinnamon and spices. The taste is not overly sweet - apples, cinnamon and honey, but the apples are still the star. The finish is mildly dry and light. This is a very easy drinking mead that doesn’t taste too sweet of honey - very nice balance and one of my favorites from the winery.

From the bottle at GTMW - Pours pale pink with no head. Nose is honey, light berry, and pear. Taste is tart cranberry, real dry and tannic. Just dries the tongue out. I think this would grow on me, but my sample was just a bit too dry. I can still get the honey and a bit of white grape, but the cranberry is in charge here. Interesting.

Sampled at GTMW ’08 from clear wine bottle. Pours a clear light salmon mead with no bubbles nor any white ring. Aroma of tart crabapple with just barely a hint of honey. Taste is tart crabapple, honey, some white pepper and a touch of white grape. Finish has a light crabapple tartness with some pinot gris character that slowly disappears after the finish. An interesting Cyser that is mostly crabapple and just a touch of honey character.
