COMMERCIAL DESCRIPTION
We brewed this French Saison to transcend the noise. Additions of Lemon Balm and Verbena to the boil add an aroma of herbs and fresh zested lemon. French Saison yeast contributes a floral, peppery flavor and light-body, and a load of spelt in the mash keep it balanced with a hint richness. Take that beautiful base beer, then age it 6 months with Brett Clausenii and you have a bright, funky tart saison with layers of citrus, herbs, hay and acidity that bring this beer to a new level. We can’t say we planned this beer to be this good... Sometimes it’s just best when you let the yeast improvise.

750ml Pours a rich golden color with moderate opaqueness and a finger of white foam. Nose is a blend of lemon herbal hints, pineapple and a touch of bubblegum and wet grain. Palate follows the nose with a bit more aggressiveness. Rustic grain, lots of bitter herbal layers with hints of pineapple and cellar funk. A bit heavier on the bitter astringent herbal flavors for my taste. Too soft on the round brett funk that is underlying but plays second fiddle in the overall flavor profile of this offering.

UPDATED: AUG 28, 2017 Caňa en el Milanito Valladolid 26.. 08..2017. (r11). Color amarillento turbio con espuma blanca. Sabores frescos suaves herbáceos con toques cítricos y ácidos también suaves bien combinados. Cuerpo ligero a medio fino con ligero carbonico. Original. Buena, refrescante, para repetir.

Draft at The Engine Room. Pours golden with an inch of white foam. Leaves a lot of lacing in the glass. Lovely lemon and funk notes on the tongue. Nice melange of citrus, barnyard funk, and tartness on the tongue. Finished clean. Nice!

Sampled from tap at ’Craftbeer Corner Coeln’. Slightly hazy, golden yellow with a medium large, foamy, slowly diminishing, white head. Sourish, fruity-grassy, floral and slightly funky aroma of lemon, gooseberry, rhubarb and some grass. A bit sweetish, slightly sourish, quite funky and fruity-floral taste of lemon, rhubarb, gooseberry, hay and some wood, followed by a medium long, slightly bitter, moderately tart, quite spicy and woody-dry finish. Medium body, slightly astringent and moderately effervescent mouthfeel, soft carbonation. Very refreshing, quite tasty!

Tap at Gambrinus. Very nice saison yeast-forward nose. Lemon aromas with a touch of pepper. Clean and crisp on the palate with again, very classic saison character. A bit boozy on the finish though. Nice effort though.

Tap. Poured clear golden color with an average frothy white head that was lasting with excellent lacing. Moderate floral yeast aroma. Medium body with a smooth texture and soft carbonation. Medium sweet flavor with a medium sweet finish of moderate duration. My expectations where met.
