Starting with a solid, but not unusual, red ale, we threw in some acidulated malt to tang it up a bit. We then took the tang way over the edge by adding a lactobacillus starter that began metabolizing the sugars to leave lactic acid and other pleasant, tart compounds. We then added just enough hops to balance the remaining sugars, boiled the brew to kill the bacterial inoculation, and fermented with ale yeast. Post-fermentation we added French oak spirals for aging. The result is a tangy, spicy, tannic, malty deliciousness that will make you very happy.

Draft at Marias. Pours a deep coppery red with an offwhite head. Nose is tart. Yogurt, cherries, raw lacto, grain and funk. Sour mash and caramel as well. On tasting, a bit less aggressive. Light vinegar and lactic acid, sweeter and fuller bodied. A bit of an odd ball and sloppy, imo. Could use some refinement. Oak and vanilla on finish.

On tap @ Henrik. Lovely amber looking in the glass this one. It slightly clouded and it has a small off-white head lingering and lacing on the top. Nose vise its really nice! Caramelly sweet combined with lots of red fruits and a wood acidity balancing all the sweetness. Yeah, this is nice. Really tasteful as well. Theres a strong wood acidity, but its not sour at all. Feels really balanced with lots of sweet red fruits and berries. Thick and oily in the mouth and it soft and prickling on the bubbles. A near licorice saltiness finishes this one off quite elegantly. A really nice little surprise this. 19.07.2014

On tap @ Henrik, Bergen. Pours amber with a small creamy head. Aroma is apple cider vinegar, with fruity rhubarb, raspberries and cherries, as well as whiffs of wooden barrels. Medium body with soft carbonation. Flavour is sour with balsamic vinegar and red currants. Ripe fruit finish.

On tap @ Henrik, Bergen. Dark amber body, small off-white head. Aroma is balsamic, white pepper, spruce, nougat and hints of almonds and caramel. Taste is port wine, caramel, sour grainy notes, lemon juice and hints of citric peel and wood. Medium body, soft carbonation. Decent port wine-ish mild sour, quite original but not awesome in its composition.

Tap @ Henriks. Small film of white foam on a deep orange / light brown body. Fruity cherries on the nose with hints of wood, caramel and a slight tartness. Taste is moderate sour with cherries and light malts. Fairly slick on the palate with close to high levels of co2. Very nice all together.

[10/10/13] Draught at Beer Temple in Amsterdam. Hazy reddish amber. Sourish aroma of cherries, plums, oak, some lacto, malt, a bit of caramel and some grainy hints. Sourish flavor with oak, dark fruits, some caramelly sweetness and some lactic acid. Medium-bodied. Decent.

Murky amber/red body, no head and tiniest carbonation. Shy farm fresh nose, damp fruits. Sultry initial taste, oily and lightly carbonated. Suitably sour with a rigid malt table. Flouff of a bittered tang but a soft waft on the finish. Dry won by linger aided by well spoken carbonation.
