Cask conditioned at Minehead Beer Festival ’14. Gold with white head. This is a fruity, golden beer, pineapple and grapefruit combination, it becomes a little astringent later on but still a decent beer. Nocturne (1992) - Cheshire, ENGLAND - JUL 10, 2014
Cask at PSBH, Manchester. Mostly clear gold with soapy white foam. Offers a brief dance through tropical fruit flavours before becoming kind of resinous and bitter towards the end. On tap @ the Stockbridge Tap. Pours golden with a slight haze and a nicely proportioned head. The nose has grapefruit into orange. In fact the taste confirms this as being somewhere in the pink grapefruit or blood orange spectrum. There’s a minerally background thing too as you’d expect from cask. Overall, I really enjoyed this beer - a great advert for cask.

Brilliant golden, clear, dense white head, good lacing
Aroma of soft grassy hops, bit odd woody floral notes, sweet pale malts, slight spicy, but there is a smell of sweat unfortunately that’s off putting
Taste - Fruity caramel malts, dab of tropical fruit notes then soft herbal hop with floral notes, some grassy hop in there, crushed flowers, bitter dryish lemon zest, quite a lot of sweet fruity caramel malts
Palate - Medium body, smooth, rather sticky. Bitter hop and oily sweet caramel malt palate. Finish is fairly lingering - bitter zesty hops with a background of sweet malts.
Overall - Interesting to try this hop, certainly it is complex, but maybe better used in combination. A bit too malty and sweet which made it somewhat heavy going.
Aroma: Light honey, earthy and peach aroma.

Appearance: Clear golden body with a thin white frothy head. No visible carbonation. Very light lacing marks.
Taste: Lemon, herbs and a hint of soap. I completely agree with the comment below about it tasting a bit like rhubarb and custard sweets - it’s an unusual flavour but, for me, it works somehow. Sweet overall flavour with a dry, peppery, biscuity finish.
Palate: Medium body with an oily mouthfeel. Flat carbonation.
Overall: I think this is the first time I’ve tried the Mosaic hop - it’s quite complex and difficult to describe, but I quite like it.

[cask at Cloisters Bar, Edinburgh] Pours a clear golden yellow, with a large white head. Extremely fruity, sticky sweet aroma, like over-ripe pears. Tastwise, starts off with some slight tropical flavours, but finishes in a very unusual sweet, soapy vibe that I was struggling with for ages, trying to pinpoint. My other half got it in seconds – rhubarb & custard boiled sweets. Mosaic’s one heck of an unusual hop, and to be honest, one I’m not sure I like
