COMMERCIAL DESCRIPTION
Émile is aged in foudres that once held Pineau des Charentes, a French aperitif made famous by the man whose name graces this beer’s label. We brew Émile with a blend of 2-row malt, local oats, local raw red wheat, Special B, and Midnight Wheat, then hop with Northern Brewer hops. Émile’s roasty, vinous flavor comes together after it’s been fermented with our house yeast, and then aged in the foudre with Lactobacillus and Pediococcus. The color of mature rosewood with ruby highlights, Émile carries the aroma of black currants and elderberries with hearty, earthy undertones. Notes of both dark chocolate and dates infuse the taste, making for a beer that’s part France, part Belgium, and all Maine.

375ml bottle from Wine & Cheese, If You Please in Hilton Head, SC. Slightly hazy but deep mahogany-chestnut color with a large, lasting light beige head. The aroma is nice and complex, very vinous, with oak, earth, leather, vinegar, prune, black currants, lactic notes. The flavor is medium-tart with a hint of sweetness, somewhat tannic, lots of red wine and dark fruits. Medium-bodied with a rich feel and active carbonation. As usual from the ’gash, this is well done.

Really nice sour brown. Cola reddish color with off white fading head. Aroma is raisins, cherries, vinous, oak, and vanilla. Taste is tart a touch sweet and mild tannic woodiness.

Bottle at home. Pours clear rich tawny with a medium, frothy tight-bubbled beige head, medium retention and mostly forming a cordon. Aroma is medium toast malt, lightly sweet chocolate notes, acidic Lacto and Pedio, light leathery stone fruits (cherries, peaches) with spicy alcohol late. Flavor is medium toast, creamy oat and earthy wheat malt, vinous and lightly tannic notes mingle with the cherries and peaches, nearly balanced acidity from Lacto and Pedio with earthy notes and red/purple berries with a dry finish. Medium body, moderate carbonation with some carbonic bite and a light alcohol warmth.

Bottle from Final Gravity. Pours dark brown with a huge beige head and a woody fruit aroma. There is a moderately sour currant flavor with a lot of oak. A nice sour brown that is not overly tart.

appearance: amber-red, with a thick but short tan head. aroma: vinous, with notes of vinegar, cherry, raisin, raspberry, balsamic vinegar, and some funk. taste: sharply funky and tart, with sour raspberry, tart cherry, woody raisin, with some light molasses, maybe a hint of chocolate, and definite brett. finish: lingering sour tartness like balsamic, a bit of general fruit. notes: Strongly sour and tart, maybe needed just a bit more sweetness or maltiness to balance. Pretty good; lively palate.

Bottle from Brewtopia. Reddish brown with lasting dense flat head. Woody sour cherry aroma with a touch of caramel. Light toasted caramel sweetness with sour cherry tartness and woody spicy bitterness with a touch of leather in the finish. Medium light body fairly lively champagne-like carbo for barrel aged. Excellent.
