750 ml bottle picked up locally from notes. Pours a hazy golden color with a big foamy off white head and some solid particles throughout. The aroma and flavor had black pepper, yeast, fleshy sweet potato, pale malts,mild to moderate funk, a general sweetness, dry grass, some additional fruit, the pepper is strong with this one, interesting, but again, I would only buy this once. Bottle from South Bay Drugs: Poured a straw golden color with dense carbonation and tons of sediment floating in equilibrium. Created a thin layer of fizzy like foam but would soon retreat to a film topping. Aroma is mild with only a touch of yeast being allowed through but the spices are undeniable. The flavor is heavily spiced and decked out with authentic Belgian yeast and not quite as easy to distinguish if the yeast in effect is in the farmhouse saison fashion or leaning to the typical signature of most Belgian blonde strong ales. In the faint background of this beer there is very little notice of sweet potato or yams, but there are strong dashes of pepper and other associated spice or seasonings that compliment this ale well. jredmond (8839) - New York, New York, USA - JAN 2, 2014
Backlog. Pours a hazy golden body with big white head and lots of lacing. Aroma is spicy with a nice floral character complimenting the malt. Mouthfeel is medium to soft with notes of fresh fruit, spice, clove, lemon and flowers.

A: Beautiful white foam atop an amber mystique of an ale. Quite lovely.
S: Plenty of belgian yeast dances and plays with the sweet potatoes. Although peppercorn was used, I’m not getting as much as expected.
T: Sweet potatoes dominate, sour pungency with a touch of peppercorn at the end. Nicely done. Complex and intriguing.
M: Full body. Full body and full body. Wow, resonant.
D: Good beer. This experience is my second, and not as good as initial, but then again, that was the night before my wedding...

UPDATED: AUG 31, 2012 750 ml bottle into tulip glass, bottled in 2009 batch 2. Pours lightly cloudy golden orange color with a nice 2-3 finger fluffy off white head with great retention, that reduces to a nice cap that lingers. Spotty foamy lacing clings to the glass. Aromas of big pear, apple, sweet potato, pepper, clove, grape, earth, caramel, herbal, and yeast spices. Fantastic aromas with huge complexity and great balance; does not feel overly sweet at all. Taste of pear, grape, sweet potato, biscuit, brown sugar, pepper, herbal, earth, clove, and yeast spices. Lingering notes of pear, grape, biscuit, brown sugar, pepper, caramel, herbal, earth, and yeast spices on the finish for a good bit. Great flavor balance and complexity; no cloying flavors at all, slightly dry on the finish. Medium-high carbonation and medium bodied; with a lightly slick and quite crisp mouthfeel that is nice. Alcohol is very well hidden with only a small warming noticed after the finish. Overall this is a fantastic saison style! Very high complexity with great balance; and very crisp and smooth sip on. Cloudy gold beer. Little white head. Dry palate, a little soft. Sweetish malt, somewhat honey like. Whisper of fruit. Some spice in the dry finish. Can’t really taste the spuds! Gets creamier as the beer warms up. Okay but was hoping for something more.
