This dark sour beer is aged with honey from our Allagash beehives in oak foudres for 18 months with Brettanomyces bruxellensis. Hive 56 has aromas of strawberries, lemon and tropical fruit with notes of dark chocolate and figs.

375 ml bottle poured into a brandy snifter. The beer is a darker brownie with a khaki head of foam. Good head retention. The aroma has honey, molasses, toffee, caramel, strawberry. Sweet berry notes with moderate roast and a tangy acidity. Pretty mild sourness to it. Some tootsie roll in the finish. Medium body and high carbonation. Definitely an interesting beer.

Blackish pour with a tan head that lasts. Aroma is brett, chocolate, caramel, somewhat fruity with citrus notes. Medium bodied, high acidity, moderate sourness, not a fan.

Bottle. A dark, delicious sour. The rich honey brings some sweetness and light to the beer and really accentuates the oak and light brett. Mixture of light, fruit, honey with fig, plum, caramel.

Bottle at City Beer. Logo work on this is sweet. Pours a deep brown to black with a thin tan head. Big bright malt and acidity on the nose. Soft toffee and a bit of stone fruit. Medium bodied, big tangy malt and acid. Slow vinegar. Malt, toast, a hint of roast, plum, prune. Malty with some nice acidity, slow acid, prune, plum, stone fruit. Slow acidity, malt a bit of toast, citrus, malt on the finish.

From a 375 ml bottle into a Trumer stem glass. Pours dark brown with brown head and lace. Aroma of tart cherry-strawberry-kumquat juice and oak. Significant carbonation and big mouthfeel. Flavors of tart strawberry-grapefruit juice with minerals, barnyard funk, slight oak. Overall complex, tart, funky & wild.

375 ml bottle purchased at Craft Beer Cellar in Waterbury (VT) on September 28, 2016. Dark reddish brown, medium head. Wine ish berry chocolate aroma, notes of fruity vinegar. Fruity vinegar taste, mostly honey orange, a bit hoppy, juicy finish. A funky juicy beer, kind of light for what is in it and how it was made!

Bottle 375ml. Pours dark brown/ black with low beige head. Aroma is of vinegar, flander’s brown features. Taste is of vinegar, flander’s brown features, roasted malt. Palate: Medium-full bodied, medium carbonation. Overall: Good, interesting.
