COMMERCIAL DESCRIPTION
During transport overseas, early India Pale Ales were stored in wooden barrels. In these barrels—beer experts suppose—some ales were naturally inoculated with Brettanomyces, a form of wild yeast. One T plays off this piece of brewing lore by pairing Brettanomyces claussenii—a yeast that exhibits itself as ripe fruit rather than strong funk or sourness—with multiple varieties of fruit-forward hops.

Aromas of citrus, pineapple, and passion fruit meld into tropical flavors that pair nicely with the beer’s lightly hopped body. Maris Otter, Munich malts, and raw wheat balance the floral barrage of Bravo, Cascade, Amarillo, Centennial, Citra, and Galaxy hops. By finishing with a mix of pleasant bitterness and tropical fruit, One T ushers brewing history into the present.

12oz bottle thanks to Lukaduke! Pours semi clear golden orange with a finger of head. Nose has tropical notes, pear, spicy grain and lemon. Taste has rustic grain, bread, yeast spice, orange peel, hints of sweetness, lemon. Finishes with spicy wet grain, candied orange, peach and pear, light sweetness, with tropical fruit in the lingering finish. Nice beer.

32oz growler from Stateline. Clear amber copper color. Big head at first but fades into nothing. Aroma is big Brett B. Dry herbal funk. Flavor has just a bit of malt sweetness to continue feeding the brett and that same dry herbal brett funk. The hops are felt a little bit at the end, just a bit of a bitterness that doesn’t seem like the brett. Simple and delecious.
