This very limited release is our love letter to barrel aging. We started with a huge imperial stout brewed with a selection of our favorite dark-roasted malts. Then we aged the beer for over a year in Rémy Martin Cognac puncheons—double sized oak barrels—where the beer breathed in the rich oak, vanilla and Cognac aromatics of the barrels, resulting in this contemplative black ale, overflowing with bold coffee, chocolate and brandy flavors.

Bottle. Pours clear black with a small beige head, some lacing. Aroma is cocoa, vanilla, brandy, some dust. Flavor is light plus sweet, light bitter, boozy, some dried fruit and roast malts. Medium light body, some acidity, hot.

375mL bottle, pours black with a small tan head. Aroma brings out lots of booze from the cognac, not much else. Flavour is a cognac bomb - not getting much else besides super boozy cognac. Wish this could be more refined. Super boozy. Not a favourite of mine.

375 mL bottle poured and shared. Thanks Keven for finding this for me. Pours black with a tan foam head. Obvious barrel aged, roasted aroma with some noticeable hop. Slight syrupy flavor with smooth chocolate, sweet caramel, and a roasted finish. Very nice beer. Another solid one.

Sweetish-sourish flavor, fruity, woody, vinous, with cognac, roast, a bit of coffee and a bit of chocolate, slightly alcoholic, with some bitterness. Medium-bodied. Very nice.

Dark brown color, intense smokey caramel cognac aroma. Sweet as silky on the tounge. Notes of coffee and chocolate. Yum!

Bottle @ home. Thanks, Cary. Black in color with a thin khaki head. Slight smoke, lots of chocolate, a bit of vanilla, and oak. A bunch of sweet caramel as well. The flavor has a bit of brandy to it and some sweet caramel, vanilla, and chocolate. A bunch of roast and charred oak as well. Not bad, but not my favorite Noir.
