COMMERCIAL DESCRIPTION
Passion Project is our latest experiment: a combination of exotic ingredients and processes to create something crazy delicious and original. In addition to Brettanomyces, Saccharomyces, and Lactobacillus, this beer was fermented with Pichia—a yeast rarely found in beer. Carefully controlled, it can unleash intense tropical aromas and flavors. We added ginger, grains of paradise, and passionfruit to this farmhouse ale, aged it in oak barrels with cedar spirals, and dry-hopped it with Citra, Mosaic, and Galaxy hops.

Bottle at Novare. Pours a hazed orange amber with a medium sized white head. Soft citrus and musk on the nose.Light lemon and tropical fruit. Medium bodied, soft fleshy fruit, apple and lightly tropical apple and oranges that are quickly falling apart.

Bottle, 6.5%. Slightly hazy yellow with big off-white head. Aroma is malt, fruit, brett, hop, spices, ginger and little cedar. Flavour is malt, fruit, brett, little cedar, lemon, citric, passion fruit, medium dry, little sour, ginger, medium sweet, peach, earthy and a little bitter.

Pours a pale, clear gold, with a very nice fluffy white head. Nose is orange rind, passion fruit, oak, fleeting notes of cedar, and a heck of a lot of funk. Taste is very busy; I get the oak and of competing hop flavors. Floral and citrus notes dance across the tongue with oak and cedar popping in and out. I get a little bit of the passion fruit on the back end. Supposedly there is ginger in this too but it didn’t make any impression. Medium bodied with a good bit of carbonation.This beer has a lot going on, but it works.

Bottle. Amber beer with a cream head. Tropical fruit and citrus aroma with sourness. Tropical fruit and citrus flavor with light sourness. Medium bodied. Tropical fruit and light sourness lingers with acetic notes.

Bottled. Pours hazy golden with an average white head. Aroma of ginger, passion fruit, citrus, a little funk, some woody and tropical fruit notes. Slightly sweet flavor that ends up being dry and tart. Medium bodied, watery to oily texture and soft carbonation. A very nice Sour.

Pours a deep golden hue with a thick, chunky, off white head that leaves lots of lacing on the way down. Smells vinous, floral, berry and citrus forward. vinous notes, dry bitterness, hints of dried berries and a metallic note. Medium bodied with heavy carbonation. Nice brew that’s taste didn’t quite live up to the nose.

Pours clear pale yellow with a finger of thick white head. Aroma of passion fruit, tons of it, guava, light pineapple and lime. Taste is mild fruit tart with a gentle sweet finish - very drinkable! Light and crisp body with average carbonation.
