UPDATED: MAR 7, 2018 Bottle. Moderate grain and hay for the malt, light lemon and grass for the hops, moderate musty farmhouse for the yeast, with passion fruit in the background. Head is large, frothy, white, with good lacing and is mostly diminishing. Color is murky yellow/amber. Flavor starts moderately acidic and sour, then finishes moderately acidic and lightly bitter. Palate is light to medium, watery, with a fizzy carbonation and a tart finish. 375 ml bottle into tulip glass, bottled on 2/22/2017. Pours slightly hazy pale golden yellow color with a 2-3 finger fairly dense and fluffy white head with amazing retention, that reduces to a large cap that lasts. Thick foamy lacing clings on the glass, with a good amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big tart/tangy passion fruit, lemon, lime, peach, pear, pineapple, green apple, papaya, mango, melon, white wine, guava, berry, citrus peel, peppercorn, ginger, oak, hay, straw, herbal, floral, grass, wheat, cracker, light leathery/musty funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, passion fruit, citrus/tropical hops, spices, wood, and moderate pale malt notes; with great strength. Taste of big tart/tangy passion fruit, lemon, lime, peach, pear, pineapple, green apple, papaya, mango, melon, white wine, guava, berry, citrus peel, peppercorn, ginger, cedar, oak, hay, straw, herbal, floral, grass, wheat, cracker, light leathery/musty funk, and yeast/oak earthiness. Light-moderate fruity/lactic tartness, fruit tang, and peppery yeast/oak spiciness on the finish. Amazing complexity, robustness, and balance of fruity/funky/spicy yeast, passion fruit, citrus/tropical hops, spices, wood, and moderate pale malt flavors; with a fantastic malt/tart/spiciness balance, and zero puckering/astringent flavors after the finish. Moderate increasing dryness from tart/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, and grainy/tangy/acidic/sticky/tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 6.5%. Overall this is an amazing fruited sour/wild ale! All around incredible complexity, robustness, and balance of fruity/funky/spicy yeast, passion fruit, citrus/tropical hops, spices, wood, and moderate pale malt flavors; very smooth, crisp, and pretty refreshing to drink with the modestly acidic/tannic/spicy/drying finish. Never overly lactic. Glad I aged it for a bit. Amazing well rounded Brett complexity; with great balance of hops, spices, and wood; with a nice solid pale/wheat malt backing against acidity. Pours a hazy golden yellow from the bottle with huge, fluffy, white head head that dissipates slowly to leave good lace. Aroma of big funky brett notes that fall to clean tropical fruits and light acidity. Taste follows, loads of tropical fruit, from the brett, cedar, hops and passionfruit, with mild hints of funk and a light spice. Complex and layered, very bubbly carbonation, very dry finish, very tasty.

There is a lot of passion fruit on the nose, very tart and zappy in the mouth, even getting a little oakiness. Good clean, crisp, fruity, tart. Golden in colour with a white head. Sample at GABF 10/07/2017, thanks to my bro for assistance with note-taking. Pours a hazy orange-bronze color with a medium bone white head that recedes steadily. Stringy lacing. Aroma of tart fruit, yeast and malt. Medium body with flavors of passionfruit, mildly funky yeast, doughy malt and a bit of citrusy hop. The finish is moderately tart with a fruity aftertaste.
