COMMERCIAL DESCRIPTION
Peach de Brettaville is a harmonious marriage of fruit and beer, bringing together our love for brett saisons and farm fresh fruit. We brewed our Saison Dolores and fermented it with twelve different brettanomyces strains, and aged it in wine barrels and our foeders with plenty of juicy peaches and nectarines.

After months of maturing and blending, this saison has developed a balance between earthy funk and stone fruit sweetness with a dry, white wine-like finish, perfect for pairing with creamy cheeses and braised pork.

Our Farm to Barrel beers focus on the eons-old tradition of aging beers in oak barrels, and our de Brettaville saisons expand upon this tradition by highlighting the magical properties of wild brettanomyces yeast. We start by brewing a bright and aromatic farmhouse ale with a blend of twelve “brett” yeast strains. After a vigorous primary fermentation, the beer is racked into wine barrels to mature. In cask, the beer takes on the complex flavors of the oak, and the brettanomyces yeast creates an exotic melange of earthy funk and tropical fruit flavors. This wild ale is alive in the bottle and will continue to mature for years.

Draft. An unclear golden beer with a lazing beige head. The aroma has notes of lemons, brett, and peaches. The flavor is lemons, brett, and straw. the flavor is sour with notes of lemons, hops, and brett, leading to a tart finish.

Sample during the "Hoppin’ On Deck 2" tasting on 06/04/2017. Hazy yellow color with a thin white head that dissipates steadily to a wispy film. Spotty lacing. Aroma of funky yeast, oak, peach and malt. Medium body with flavors of funky peach, yeast, biscuit malt and oak. The finish is brett yeast and peaches. Good beer all around.

Bottle at home in garden, 30th June 17. Pours a hazy orange, neat bubbles, lacey head. Aroma is funk, lemon, apples, wood. Taste is lemon sherbert, tart fruit, tingley sourness, unripe peach, barrel, funk and wood. Really good.

Bottle thanks to Kyle. Pours a cloudy orange with small frothy white head that lasts. The aroma is strong peach skin, brett, oak. Thin body, acidic, peach, strong brett, oak, light dry finish, very good.

375 ml bottle shared, thanks Tyler! Fall 2016 edition. Mostly clear orange with off-white head. Aromas of peach, funk, oak, Brett. Tastes of peach, tart acidic notes, funk. Light body with a dry finish. Nice.

0.375l bottle. This one pours a blurry looking golden colored body. Not much of a head, but on the pour there was a small white fizzing away little thing. It smells like Kælderkold. Really sour, lemonic and tart. Loaded with lingon berries and sour gooseberries. Sour unripe nectarines and oaky wood. Lots and lots of aroma and it smells superb. Oh, it tastes quite unlike anything I’ve had in quite some time this. Really soapy a d it has a good amount of bitterness for sure. The lemonic tart sourness just grows on the sides of the tongue. It has a mild oily texture in the mouth and it’s just below average on the carbonation. It’s less sour after a while. Traces of cucumber water in the long tail, and did I mention that this is pretty funky? Well it is. Floral long peachy sweet and oaky dry aftertaste. A strange but really good one. 03.03.2017
