COMMERCIAL DESCRIPTION
It’s easy to think of brettanomyces as a bad guy. This wild yeast is infamous for devastating batches of beer and wine. With our new Saison de Brettaville, we aim to show that brett’s not all bad. We’ve highlighted the best characteristics of this much maligned yeast and the astounding range of tropical fruit flavors and pleasant, earthy funk it contributes to sour beers and saisons.

We began with our classic Saison Dolores and added twelve different strains of brettanomyces, capturing a snapshot of each strain’s best flavors and aromas, then aged this new brew in white wine barrels. Finally it was finished off with a delicate dry hopping of Hallertau Blanc, Mandarina, and Mosaic.

The result is a farmhouse ale that is more funky than sour, with nuance that only brett can create. Serve with soft, creamy cheeses or as a tangy counterpoint to rich charcuterie.

Bottle - solid sour saison - lots of funk - good sour fruit but phenolics (I get banana) a bit jarring in the aftertaste - like it don’t love it like the other Almanacs.

A 375ml bottle, bottled in September 2015. Poured into a Lost Abbey teku. It was a nice hazy golden colour with a two finger white head that had pretty good retention and nice lacing. Aromas of flowers and orange zest with hints of grapefruit, oak, pine and brett funk. Tastes of white wine with hints of oak, mango, candied pineapple, lemon and funk. Medium bodied with moderate carbonation. Overall this was nice and easy to drink. Only a little sour, but well balanced and still good after almost 19 months.

Pours cloudy and gold with a big white head. Smells quite fruity and very bretty. Very funky beer, dry, coates the tongue, slightly tannic. Very flavourful and a bit of a kick, yummy!

UPDATED: OCT 15, 2017 375ml bottle. Pours gold and hazy. Lemon, peach, bread, sourdough bread, lemon juice, lemon zest, gooseberry, funky hay, white grapes. Sour, yeasty, bitter, sweet, dry. So much going on and so much to love. Undoubtably the best saison I’ve ever drunk.

Hazy dark straw pour with off-white head. Nose is hops, citrus, fruit. Tart flavor, very complex, more hops and fruit.

Bottle shared with Jo and Seb. Aroma: big citrus mostly lemon, tropical fruits, white wine. This is really green. App: clear pale with green tint, small white head, good lacing. Taste and palate: medium body, clean acidity, resinous and bitter finish. Overall: damn good. I really like this kind of beer. Hoppy and sour. Another great beer from them. Like Jo said: better than sex.

Bottle enjoyed at Christmas in Colorado. Funky, honey, straw, slight pear aromas. Tart, honey, funky, fruity, mango flavors.

375ml bottle. Pours a hazy medium gold, with a large white head, which fades fairly quickly and leaves some lacing. Riesling, sour citrus and leather make up the aroma. Grapefruit hops, strong tartness and earthy funk up front give way to a leathery body, with oak notes. The finish is crisp and sour. A nice sour.

Bottle in Winter Park with jcnielsen. Thanks Justin! Pours a milky yellow appearance with a white head. Dank, piney hops in the nose. Grapefruit, lemon, vanilla, funk, and light plastic in the nose. Kind of tastes like pineapple upside down cake. Candy, herbal, and white wine notes. The aroma is pretty fun but the flavor wasn’t quite as good as expected. Fine to try but not a repeat buy.

Bottle. Hazy golden with two finger head. Excellent flavor. Light white wine barrel adds just a bit of tartness. Mild funky Brett. Super enjoyable.
