COMMERCIAL DESCRIPTION
Wakatu is a New-Zealand born hop prized for its floral and citrusy aromas, a relative of classic Hallertau hops that is light on bitterness and often used in clean, German-style lagers. We aimed to highlight the complex fruity and limey aromatics of this lesser-known hop with our latest single-hopped sour brew, Wakatu Sour.

We began with our traditional sour blonde ale, fermented with our house sour culture and aged in barrels for about six months, then blended in a younger, one hundred percent brettanomyces fermented beer. This blend combines the oaky, vanilla character of the barrels with tropical, pineapple and guava-like flavors created by brett, and highlights the fruity tangerine and lime aromas of Wakatu hops.

Bright brilliant clear golden (until you pour the sediment) with a thin sticky white head. Amazing wild woody funky and lemony tropical tart aromas with a lovely flora tropical hop bitterness under the hop twang. Lovely bright tropical and juicy sour flavor with a delightful floral and leafy hop resin underneath. A little pineapple and guava and woody funk.

Hazy golden color with a medium sized, white head that left nice lacing on the glass. Aroma of floral hops, citrus, some tropical fruits, and a bit of grass. Taste of citrus, grassy hops, some melon, tropical fruits, and a sour finish.

Bottle sample at a tasting at troubles’s place. Thanks troubles. Cloudy yellow with a white head. Great aroma of fruity hops, wine, oak, some lacto, a bit of vinegar. Sour flavor with wine, lacto, wood, a bit of vinegar, fruity hops. Medium-bodied. Really good.

Bottle, thanks SirLimpsalot. Slightly hazy golden with a white head. Aroma and taste of funk, citrus, apples and some light wood. Rather soft and refreshing with a tart finish.
