Aroma of hops and wild yeast.
Flavour is sour wild yeast with a bit too sweet champagneish wineish flavour.

1/27/2011: Alvinne The Oak Melchior (Ale brewed with
mustard seeds and aged in oak [Calvados] barrels)... Aroma: Crisp,
tart, alcoholic; funky and herbal with just a tinge of sweetness.
Appearance: Murky deep gold color; thin off-white ring of foam around
the edges. Flavor: Sweet, pale malts in the front with fruity
undertones; lots of alcohol through the nose; dry, oaky and herbal
from the middle through the finish; unfortunately, I can’t pick out
the mustard seed... Palate: Medium-full, not really smooth - PASTY
is a good way to describe it, but not bad; slightly sticky on the
lips. Overall: Pretty good, but I would have liked to have the mustard seed show through to really make this one unique.

Not quite as good as expected. Poured at a good temperature; it was a gusher; with a small, cream-colored head that settled to a thin island and ring, no lace. Color would be a clear, but for the large amount of tiny particulates in suspension, amber. Aroma is yeast, malt, mustard, fruit. Flavor is more bitter then tang, then sweet. Although in the finish it’s sweet and tang that linger. Otherwise, also like nose. Body has some clashes between bitter and tang along with some heavy boozieness. A hazy dark golden, almost amber color, with off-white head.
Aroma sweet, malts.
Complicated, and medium to full body.
Taste sweet, alcoholic, woods, ... Nice creation !
