COMMERCIAL DESCRIPTION
Ale brewed with mustard seeds and aged for 6 months in Calvados barrels that contained cognac for 10 years and calvados for 8 years. The barrels were found at a local farm in France.

Bottle... Poured hazy golden with a white head. Barf-like, solvent, chemical with some hard liquor and even a scotch-like tone. Some funk and a hot finish.

Draught. Mustard seeds? Really? Good or bad I didnt seem to notice them at all. For me the aroma and flavor was reminiscent of sour cherries. I also did not notice the 11+ ABV too. Okay.

1/27/2011: Alvinne The Oak Melchior (Ale brewed with mustard seeds and aged in oak [Calvados] barrels)... Aroma: Crisp, tart, alcoholic; funky and herbal with just a tinge of sweetness. Appearance: Murky deep gold color; thin off-white ring of foam around the edges. Flavor: Sweet, pale malts in the front with fruity undertones; lots of alcohol through the nose; dry, oaky and herbal from the middle through the finish; unfortunately, I cant pick out the mustard seed... Palate: Medium-full, not really smooth - PASTY is a good way to describe it, but not bad; slightly sticky on the lips. Overall: Pretty good, but I would have liked to have the mustard seed show through to really make this one unique.

Mustard nowhere. Pours brown ruby with little head. Very Belgian strong with sweet candied fruits, plum, caramel, nutty malty ness, sweet with a drying oaky finish.

dasilky1 tasting my bottle from a long ago international trade. Pours orangey with a tan ring. Nose is sweet with apple and oak. Taste is oaky, with sweet apple, very nice calvados barreled brew.

Not quite as good as expected. Poured at a good temperature; it was a gusher; with a small, cream-colored head that settled to a thin island and ring, no lace. Color would be a clear, but for the large amount of tiny particulates in suspension, amber. Aroma is yeast, malt, mustard, fruit. Flavor is more bitter then tang, then sweet. Although in the finish its sweet and tang that linger. Otherwise, also like nose. Body has some clashes between bitter and tang along with some heavy boozieness.

From bottle, 33 cl. ( at beerzolder sat. 17.01.09) Very good ! A hazy dark golden, almost amber color, with off-white head. Aroma sweet, malts. Complicated, and medium to full body. Taste sweet, alcoholic, woods, ... Nice creation ! re tasted yesterday @ alvinne.
