COMMERCIAL DESCRIPTION
Ale brewed with mustard seeds and aged for 6 months in Calvados barrels that contained cognac for 10 years and calvados for 8 years. The barrels were found at a local farm in France.

Bottle Cloudy peach-colored ale with a small, creamy, white head. Good retention. Odd bouquet - spicy, salty, herbal and earthy. Medium-bodied with an oily mouthfeel and prickly carbonation. Like the aroma, the flavor is odd, but enjoyable herbal and earthy. Spicy mustard seed, anise, coriander, earthy hops, light acidity and a touch of salt. Finishes earthy and herbal. Strange brewery, this one. Lots of hits, misses and almosts. Always off-center.

Clear amber coloured beer with small white head and no carbonation. Malty alcoholic aroma. Full slight sparkling palate. Finish is rather dry bitter with spicy fruited hints.

1/27/2011: Alvinne The Oak Melchior (Ale brewed with mustard seeds and aged in oak [Calvados] barrels)... Aroma: Crisp, tart, alcoholic; funky and herbal with just a tinge of sweetness. Appearance: Murky deep gold color; thin off-white ring of foam around the edges. Flavor: Sweet, pale malts in the front with fruity undertones; lots of alcohol through the nose; dry, oaky and herbal from the middle through the finish; unfortunately, I cant pick out the mustard seed... Palate: Medium-full, not really smooth - PASTY is a good way to describe it, but not bad; slightly sticky on the lips. Overall: Pretty good, but I would have liked to have the mustard seed show through to really make this one unique.

Mustard nowhere. Pours brown ruby with little head. Very Belgian strong with sweet candied fruits, plum, caramel, nutty malty ness, sweet with a drying oaky finish.

Bottle shared at the RBESG 2014, grand tasting 10/08/2014 Craft Beer Co Clerkenwell. Aroma is hot alcohol, sollent, sharp apple, beerry. Haxed golden coloured pour with a loose white head. Some honey on the nose. Flavour is tart apple, granny smith, biscuity malts. Palate is semi-sweet, slight tart /sharp on the tongue.

Bottle, shared by BBGTC. Pours a hazy copper-hued orange body with a miniscule white head. Nose is caramel, toffee, port wine, raisins, wood, alcohol and hints of figs, nougat and calvados. Taste is caramel, red fruits, mustard, boozy calvados notes, nougat and hints of toffee, port wine and burnt sugar. Full body, soft to low carbonation. Decent enough, with subtle calvados notes coming through with even more subtle mustard seed hints. Pretty nice, but a bit boozy and too low on carbonation.

Bottled. Orange colourd. Unclear. Small beige head. Sourness, light yeast, some fruits and calva in the aroma. Flavour is sour and yeasty as well. loads of alcohol notable and wood as well. Tense grape and grass. Medium bodied. Sourish and grapy end. Not really something for me this one.

Hazy copper-amber color, small mostly vanishing head. Aroma has lots of raisins, alcohol, cognac, riped apples. Medium-bodied. Alcoholic "bitterness", fruity with raisins and plums, hints of apples, lychee. Flavor is certainly similar to regular Melchior, but this is not so liquerish as it is and calvados barrel brings some extra sweetness. Heavy stuff with 11.5% ABV.
