Editor’s note: a special made for the Copenhagen Beer Celebration 2013.

Danish: Vi bryggede denne lambic helt tilbage i juli 2009 på vores gamle brygværk. Basisøllen undergik en ret kompliceret mæskning og blev derefter kogt med gammel humle. Så lagde vi øllen på Bourgogne-fade i hele 3½ år tilsat en surølskultur, som rummede hele 3 Brettanomyces-stammer og en hel del andet godt. I 2013 vækkede vi øllen fra dvalen ved at tilsætte friske bær, som den derefter er lagret med i 3 måneder. Vi er glad for friske bær, men kan ikke anbefale nogen at købe dem midt om vinteren - ever!

English: This beer was brewed a very long time ago on our old system, July 8th 2009 to be precise. The base lambic underwent a rather complex mashing and then had a boil with old hops. Then we put the beer to rest for 3½ years on a Bourgogne barrel adding a sour blend containing 3 different Brett strains – and all sorts of cute bugs. In early 2013 we woke up the beer by adding fresh berries, and put it back to rest for another 3 months. We love fresh berries but cannot recommend anyone buying them in the middle of the Danish winter.

From tap. Pours cloudy deep red with a small pink head. Aroma is dense raspberry and light sulphorish. Tart, citric and raspberry dense flavoured. Dry and light herbal raspberry finish. Dry acetone.

[email protected] Very deep pinky color, no head. Strong sweaty, rasberry aroma, old socks? Medium-bodied. Flavor has tartness, fruity candy-like flavors but also sweaty socks. Strange stuff.

Frisk lett kunstig fruktig lukt med preg av friske bringebær, korn, sukker, karamell. Frisk syrlig smak med preg av sure bringebær, bruspulver, korn, eddik, gras. Middels bitterhet som set litt. Grei, men litt rar.

Hazy medium pink - red colour with a average, frothy, good lacing, mostly lasting, pink head. Aroma is moderate yeasty, baking yeast, raspberry. Flavour is moderate to heavy sweet with a long duration, dry, rapsberry, tart raspberry, lovely raspberry flavor. Body is medium, texture is oily, carbonation is soft. [20130503]

Draught @ CBC2013. Pours vibrant red with a small frothy pinkish white head that quickly dissipates while leaving a small trace on the glass. Smell is sour and fruity with crackers, crushed raspberries, lemon juice, raspberry jam, horse blanket, hay, raspberry hard candy, white pepper corns, cereal, leather and hints of cardboard. Taste sour, malty and fruity with crackers, crushed raspberries, hay, oatmeal, dry wood, horse blanket, carboard, lemon juice and barnyard. Mouthfeel is tiny round, tart, dry and medium bodied. Finish is sour and tart with raspberries, hay, oatmeal, cereal, lemon juice and crackers. Smells good and looks great, the rest is sadly a trainwreck…

CBC. Cloudy red - pink beer. Vibrant pink head! Very dry palate, light and crisp. Sharp sourness, acidic cherry - raspberry. Unusual back drop of toasted hazelnuts that get quite strong in the dry finish. Different but not an easy drink.

Draft @ CBC 2013. Pours a reddish color with a small pinkish head. Has a fruity tart bretty raspberry aroma. Fruity citric acidic raspberry flavor. Has a fruity tart citric raspberry finish.

On tap @ Copenhagen Beer Celebration 2013. The most interesting appearance of all the beers at the festival I dare to say? Looks like red blood (not the royal blue) thinned down with white spirit, giving it a really glow-in-the-dark thing. Looks really good. Lacks a head. Tart raspberries on the nose with an acidity of lime. Unfortunately I just tasted it without finishing with the aroma, and it tastes mildly put, strange. Not something I had expected can be a good or a bad thing. In this case it was a bad thing. Really grainy y, lots of corn and starch. Some rise pudding tones here. The raspberries just drowns in the grains. No favorite. 03.05.2013

Tap at Copenhagen Beer Celebration 2013 - Session 1. Pours cloudy grapefruit pink with a creamy, white foam head. Fresh raspberry in the nose with light grass. Medium sweet flavor with jammy fruits, moderately acetic, with some buttery corn notes. Medium bodied with average carbonation. Tart raspberry finish with some acetic burn, more jammy fruits. So so.
