Hefeweizen or weissbier("white beer") is a style made famous in Southern Bavaria. It is a unfiltered wheat beer brewed with up to 60% malted wheat, and uses a very distinctive ale yeast strain that produces estery, fruity, aromas and flavors of clove, banana, pear, and bubble gum. It is a beer that is normally sold bottled, as the bottle is sedimented with yeast, for a secondary fermentation in the bottle. Ambrausianum might be brewed in Northern Bavaria, but it tastes as good as any Southern Bavarian hefeweizen I have ever tasted. This beer is available only at the brewpub vom fass or poured from a barrel, and it is so fresh and delicious, you will be screaming for more.
Ambrausianum Weizen pours to a beautiful, opaque, pale golden color with a thick and rocky white head, and a vibrant carbonation. The nose on this beer is just packed with lots of good crisp and grainy wheat malt aroma paired with estery aromas of clove, and pear. The body on this beer is firm with tart and refreshing wheat malt flavor, paired with estery fruit flavors of pear and bubble gum. Ambrausianum Weizen finishes with more of those tart wheat and fruit flavors up front, then ends with a hint of clove flavor that lingers on the tongue.
An outstanding example of hefeweizen for Bamberg’s newest brewpub. This is an impressive place, and it is hard to believe it has only been a brewpub since the summer of 2004. It is a welcome addition to the phenomenal breweries of Bamberg, and is a must visit. They also brew a helles, and a dunkle which are as impressive as the weizen. And feature one guest beer which is of course, Schlenkerla Rauchbier. I enjoyed a glass of this weizen with a wonderful lunch of liver dumpling soup, followed by a grilled bratwurst, Nurnberg sausages, saurkraut, and potato dumplings. On tap at the brew pub Creamy, slightly off-white head with an excellent lace, which diminishes almost totally. Nuddy, orange body. Nose of vanilla, smoke, cheesem milk, cream and some hints of flowers and citrus. Very strange aroma for a hefeweizen, as one would expect a prominent presence of citrus. But that doesn’t make it’s bad, not at all, the aroma is very nice and quite complex. Lightly sweet, moderately bitter initial flavour. Lightly bitter finish. Lightly to medium bodied and a soft carbonation. The flavour is very nice aswell, Very nice balance, not too much weizen, but very fruity with some weizen hints. UPDATED: AUG 10, 2004 Tap, at the Brewpub, July 2004. Hazy amber gold, lasting fluffy white head and good condition. Pleasant sweet banana accented nose with subtle esters and a touch of wheatiness, gentle yeast and esters in the mouth joined by nice balance of banana. Finish has a long lingering yeastiness with low banana fruitiness. The best Bamberg brewed wheat beer?

Look; creamy off white head and apricot hazy body. Aroma; malts, sweets, coriander, ginger, cinnamon, almond dust, grassy dusty meadow. Taste; smooth malts, coriander, ripe bananarama, ginger, sweet butterscotch, bread, cinnamon, strawy hops - leading to a malty finish with grassy notes. Normal texture and soft-normal carbonation.
