COMMERCIAL DESCRIPTION
A traditional saison with Brettanomyces C and Lambicus added in secondary and aged for six months. Different batches have had different boxing themed names, meant to differentiate the batches which are sometimes slightly different.

2012-09-20. Hazy dark pastel orange, modest off-white head. 3+ Light alcohol, subtle funk overtones, very light barnyard and funk, sweet and sour pale malt. Aroma is slightly muted by the a$$hole standing right by the door out front with a joint. 7+ Flavour is softly and pleasantly sour, modest but lovely fruit character that I struggle to define - sort of tropical notes, accents of sweet lemon but not quite. Very mild yet very nuanced bretty funk. Lingering not quite sweaty funk in the finish. 7+ Super smooth average to light palate, very soft carbonation. More subtle than I was hoping for, but holy schnikes this was drinkable. One of two I went back for at the end of the night. Volo Funk Night, Toronto

November 19, 2013 - at the brewpub; on draught. Hazy yellow with a diminishing small off-white head - lovely lacing though. Aroma is nice - pear, peach, elderflower, gluter, mild alcohol and a bit of orange zest. Taste follows, but simpler with floral notes dominating. Average-to light body, airy, hint of astringency, quickish finish with a light floral aftertaste. Nice.

On tap at Bar Hop. Clear pale golden with a medium white head, moderate retention, leaving some lacing. Aroma is of herbal brettanomyces, mild leathery notes, mangoes and spicy cereals. Taste is gently tart with herbal brettanomyces, mangoes, lemon and very light spicy cereals presence. Light-medium body. Medium-good carbonation. Herbal brettanomyces finish. Dry. Good gently tart farmhouse ale with nice quenching character. Well balanced.

Draft - Sweet fruit esters, stone fruit and Brett. Hazy gold with a nice white head. Light stone fruit, Brett yeast, some light hay and bitterness. Pretty decent.

(On tap at Bryden’s, June 25 2014) Pours hazy pale gold with a big bubbly white head that is short lived but lacy. Aroma lightly fruity, lemon pastry, slightly tart, sweet pale malt, a light funk and a bit of sweaty character. On the palate, a bit of sour/tart fruit with lightly sweet grainy pale malt, herbs, lemon overtones, and a mineral character. Brett funk is restrained but definitely there, especially in the finish with some sweaty tartness. The minerality and yeast make the finish rather dry and there’s a very light bitterness in the aftertaste. Body on the lighter side of medium but with a creamy soft effervescent carb. This is a fairly subtle beer and the Brett is hardly overwhelming, but the drinkability is high and as farmhouses go it’s a nice take.

Aroma: mellow, subtle funk , mild fruit , mild tartness , red gooseberry. Nice. 7+
Appearance: hazed golden with hint of bright amber. White top. Nice color play.
Palate / Taste: Medium light bodied. Grainy with elements of wheat. Slight creamy softness with tart top end. Not bad…

Boxer Saison - pale straw pour. Huge rocky head. The nose is softly earthy and a little bit fruity. moderate sweetness but there is a soft and appeali g tartness that is pretty lovely. A touch of minerally flintiness - I’d love to see this in three more months - Brett just starting to show up and dry it out. Great bones in this one.

Draught at Volo for Funk Night, Sept.20. Pours a murky gold with with a spare diminishing frothy white head. Aroma of funky yeast, sour fruit, herbs and sweet malt. Flavour is funky, malty and fruity. Medium bodied. Really good.
