A sour collaboration with Crooked Stave.
Sour ale fermented in fouders with 3 strains of brettanomyces, aged in cognac barrels 11 months with a funky bunch of bacteria.

Bottle. Pours a dark amber color with a small off-white head. Has a fruity sour tart woody aroma with weak hints of cognac. Fruity sour tart woody caramel flavor. Has a fruity sour tart woody finish.

Botle from De Hopduvel. Dark brown colour, beige foam. Medium carbonation. Aroma of red fruit, vinegar, wood, cognac. Tart with light sweet notes. Nice and balanced.

Bottle... Cloudy Longhorn-orange pour with no head. The aroma is stacked with yeast-driven spiciness, some maltiness and a decent element of stone-fruitiness. Full-bodied with airy carbonation. The flavor is tart, malty and fruity, although there’s less fruitiness and sourness than I was hoping for. At least there is some slight cognac warmth. Finishes tart, raspy and dry. [1/30/16] Bottle sample at the Encomium bottle share, after RateBeer Best awards ceremony at Hyatt Vineyard Creek Hotel in Santa Rosa. Thanks everyone who shared bottles! Murky amber-brown. Sour aroma with caramel, fruits, balsamic vinegar, oak. Tart and slightly sweetish flavor with vinegar, oak, caramel, fruits. Medium-bodied.

Bottle share, again thanks to Matt. Murky brown color with a sandy head. Nose is fruity and sour, brett, and oak. A deep underlying wave of sweetness accented nicely by the sour notes. Oak, brett, vanilla, and something fruity like pie cherries. Soft. Very nice.

750ml bottle thanks to Matt. Pours out hazy brown with a small head. nose is vinegar vanilla some fruit maybe strawberries and a bit of sweetness. Taste is more of the sour tart some berry sweetness and lots of barrel notes.

Bottle. Murky brown pour with light white head. Aroma is strange, some sour funk mixed in with some dark fruit undertones, hard to describe but very different, could be th use of cognac barrels. Taste is light sourness, oak, black currants, with a semi dry finish. Very nice beer, don’t know that I’ve ever had a sour aged in cognac barrels, the result is pretty darn interesting.

Tiny-chestnut, thin white cream head. Muted sweet cherry acetic nose, some playdoh, lightly salty. Plum flavor sweet up front, heavy cherry acid mid with soft, waxy Brett saddle mid-late, some light stable and citrus throughout, fruit-acid-sugar three-way but all of it hot, not integration either.

Pour is dark brown with off white head. Nose has an off plastic, burnt wood, booze, toasted grain, and sour cherry. Flavor is better, still overly sweet and singular. Sour cherries dominate, faint booziness, light wood, acetic acid. Soft feel, low carb, semi dry.
