Sour ale fermented in fouders with 3 strains of brettanomyces, aged in cognac barrels 11 months with a funky bunch of bacteria.

Dark cola colored... Aroma of caramel, dark berries, cherries, candied sugar... Flavor is light notes of cognac balanced by amazingly complex dark sour goodness, lots of caramel, dark fruits, figs, berries... Amazing beer ---Rated via Beer Buddy for iPhone

Serving: 22 oz. bottle. Medium to dark brown pour. Interesting nose of wood, funk, and berries. Plenty of funk in the flavor with notes of brett, red wine vinegar, wood, and berries. It reminded me of a mix of an Flanders brown and Flanders red in some ways. Interesting and tasty.

Flaske, 75 ml. Tak, Gisle. Kastanjefarver med rødlige nuancer og et lavt lyst beige skum. Syrlig, maltet, oakey. Noter af bær, grapefrugt, acetone, vådt træ, skovbund. Ekstremt mange lag. Kompleks som en god Bourgogne. Wauv!

Pours a deep mahogany color with some ruby edges and two fingers of tight eggshell foam. Nose is inviting with ripe burgundy acidity, soft roasted grain, sweet pipe smoke, violets, funky old wood, caramel, dark fruits... Mmmm palate follows with a mysterious fruitiness that is both unique and delicious. Its like soft cognac soaked plums, with cherries, cranberries and pinot noir grapes added into the mix. Nice backbone of soft medium roasted malts with hints of cocoa and caramel that back up the moderate acidity and mingle with an earthy leather and mushroom nuance. Really soft and deliciously delicate sour beer !

UPDATED: DEC 11, 2014 Bottle: Thanks, Jason. Dark copper body; semi-translucent with a khaki foam on top that disperses quickly to a foamy collar. Tart red apple aroma with a good amount of vinous red grape, red wine oak, & semisweet booziness. I get more wine than cognac on the nose, but that’s okay. Faint lemon, mild acidity, & a pinch of lactic acid. Light hints of vanilla, cherry, & wood. Flavor is heavier on the vinous notes, as well as the ripe cherry flavors, coming alive with a good deal of acidity & a nice bite of sour lacto. Hints of cinnamon, spicy oak, red apple, & red wine grapes that battle between lactic sourness & vinous booziness. Slightly dry finish with a lingering sweet boozy cherry & woody finish. Really enjoyable stuff.

Dark chestnut pour with a small cashew head that left a spot or two of lacing. Tart plum skin, raisin, cherry flesh, oak, vinegar, funky cheese, and even mild chocolate notes. Really complex and assertive. Not an enamel peeling sour but definitely causes the lips to pucker a bit. Ample carbonation. Delicious!

Pours dark dark brown with a nice tanned head. Smell of tart berries, funk, barnyard, cognac, grapes, hints of toast, dark fruits and malts. Moderate sweet, very fruity, i find tart berries and funk, complex play with dark fruits, delicious stuff. Moderate bitter, some astrigent tannins, quite nice. Wow, a superb sour from two of the very best breweries. I liked this one a lot
